Pasta with Pumpkin and Sausage

Years ago, Rory and I were watching Rachael Ray’s 30 Minute Meals, and she made a dish like this. It sounded so wonderful, so we decided to give it a try. Pasta with Pumpkin and Sausage has been a family Fall favorite ever since. My kids can’t wait for me to make this meal every year. Kirk was home from college for a night this past week, and this is what we had for dinner. YUM-O!

Pasta with Pumpkin and Sausage

Ingredients:
- 2 tbs. Extra Virgin Olive Oil (used 1 tbs. at a time)
- 1 lb. Sweet Italian Sausage
- 4- cloves Garlic (cracked and chopped)
- 1- medium Onion (finely chopped)
- 1- Bay Leaf (fresh or dried)
- 4 to 6- sprigs Sage Leaves (cut into chiffonade, about 2 tbs.)
- 1- cup Dry White Wine (I use Pinot Grigio)
- 1- cup Chicken Stock
- 1- cup canned Pumpkin
- ½ cup Heavy Cream (3 turns around the pan)
- 1/8 tsp. ground Cinnamon
- ½ tsp. ground Nutmeg (ground or freshly grated)
- Coarse Salt and Pepper to taste
- 1 lb. Penne Rigate (cooked to al dente)
- Romano or Parmigiano Cheese (for grating)

Directions:
- Heat a large, deep, non-stick skillet over medium heat. Split Sausage casing and scrape out the meat. Add 1 tbs. Olive Oil to the pan and brown the sausage. Transfer sausage to paper-towel lined plate.
- Drain fat from the pan and return to the stove.
- Add remaining 1 tbs. Olive oil, Garlic, and Onion. Saute for 3-5 minutes until the onions are tender.
- Add Bay Leaf, Sage, and Wine to the pan. Reduce wine by half, about 2 minutes.
- Add Chicken Stock and Pumpkin, stir to combine until the sauce comes to a bubble.
- Return sausage to the pan, reduce heat, and stir in Heavy Cream.
- Season the sauce with Cinnamon, Nutmeg, Salt, and Pepper. Simmer mixture 5-10 minutes to thicken sauce.
- Return rinsed and drained cooked Pasta to its cooking pot. Remove bay leaf from sauce. Pour sauce over the pasta and toss over low heat for 1 minute.
- Garnish the pasta with lots of shaved Cheese and sage leaves.

- Spinach Salad with Apple or Pear and Red Onion dressed with Extra Virgin Olive Oil and Balsamic Vinegar

Now that’s one taste I’ve never tried pumpkin with sausage, it must taste interesting. The recipe seems easy enough, so I’ll give it a go one of these days.

This sounds soooo good! I wonder if I could use mashed pumpkin that I have cooked myself? I don’t do pasta but I bet this would be excellent over spaghetti squash noodles or even on a bed of greens. Yummy!

This sounds so good! I’m a little scared to try it, though – it seems like an odd yet “could be really good” combination! But I think it definitely falls into the comfort food category!
It definitely is a comfort food! You should give it a try…it’s super yummy. It is not over-powering with pumpkin, just a really nice blending of flavors.
We had something similar to this at the Biltmore house once and it was delicious. I don’t know why I never thought to try it at home!

Oh my goodness, that looks and sounds really good. I would not have thought of pumpkin sauce with pasta, wow. I had some pumpkin chocolate chip cookies at the hog roast this weekend that were AMAZING. I love this time of year. I like to make pumpkin muffins, pancakes or my famous egg-free pie 🙂

I would not of thought of this combo either! But I have come across many pumpkin/sweet potato chili recipes so I guess the meat/pumpkin combo must be good!

I’m thinking this would be awesome over risotto. Have you tried a smaller pasta or do you think you need a large pasta to hold the sauce?

Mmmm that looks good. We always serve our pasta and sauce separately. I am a fan of tons of sauce, my husband and 3 of the kids don’t like a lot of sauce (weirdos) but my baby is all about the sauce too. I think my kids would give me funny looks when I say this is pumpkin pasta, so I think I’ll have to tell them afterwards. I like RR, it made me laugh when I read the ingredients, it’s a total RR recipe — all her favorite ingredients!!
