What a Delight ~ Winter Tomatoes!
Luke and I still have four tomato plants in our garden that just do not want to give up the ghost. This is the second winter for my Lemon Boy tomato–can you believe that?! We also have a green bell pepper that has 4 or 5 peppers growing.
Sunday we picked a full dozen tomatoes from those vines. It was so exciting. So, I thought I would look around Pinterest and see what I could find for Winter Tomatoes. Here are a few of the yummy ideas I came across. Check out the recipes; I hope you enjoy.

Doesn’t this soup look absolutely delicious? I think I may try this using my fresh from the garden winter tomatoes and supplementing with canned tomatoes if need be. Yum!
Tomato-Rosemary Confit Croustades by Cooking on the Weekends
What a great snack or appetizer! The color is so pretty. I can almost taste the crunch of the croustades, the succulent tomato and rosemary… scrumptious.

Can’t you just smell the wonderful aroma of roasting tomato and rosemary? This would be so good with baked chicken or beef roast.
I can’t wait to give these recipes a try. Our little bushes are full of tomatoes waiting to ripen. It’s going to be a delicious winter!

Those tomatoes are remarkably beautiful for this time of year. The recipes have to be good with fresh fare and especially anything with rosemary! Beautiful!

Fresh tomatoes from the garden in January! Wow! I would love to make a good old fashioned BLT! Those recipes all make me wish for summer!
I adore BLT’s! My Lemon Boy plant survived the winter last year, but we didn’t get any January tomatoes. This is a real treat! 🙂
Lord knows I LOVE a good tomato!! They are one of my favorite vegetables. I like to bake cherry tomatoes drizzled with olive oil and sprinkled with sea salt and pepper. So easy and so delicious. Thanks for all these great recipes.

good for you still having tomatoes. Tomatoes are actually perennials, so it is normal for them to be there for years. It is just that it usually gets to cold in the winter and they have to give up.
Even here in Southern California, our winters get too cold for the tomato plants to survive. I feel so lucky! 🙂
The only tomatoes I get are from the grocery store LOL Right now, the ones I have here are being added to our dinner salads 🙂
Today salad is a great option here as well–it’s 86 degrees outside! Blech! I hate Santa Ana winds. Enjoy your tomatoes, even if they are store bought. LOL 🙂

I’d have a tough time choosing between those great recipes. It’s cold and rainy here so I’d have to go with the soup.

There are tons of different uses for tomatoes–from savory to sweet to just off the vine. You gotta love tomatoes! 🙂
Oh, how I miss our fresh garden grown tomatoes. In New England no hopes of any winter tomatoes without a greenhouse. We do grab a few here and there at the market for BLT’s this time of the year. I’ll have to try some of these come summer time when we have more than enough from the back yard. They all look yummy!
You can always try these (especially the soup) with canned tomatoes. Be sure to freeze some tomatoes for next winter. 🙂
Oh you lucky, lucky duck! Of course we can’t do anything like that here, it’s been down to -5 twice already. Makes me year for my summer garden though! Great recipes. I love cooking with tomatoes.
Tomatoes are good in almost anything aren’t they? You can try these with canned, and don;t forget to freeze some tomatoes for next winter. I have found that they freeze very well. 🙂
I think that would be awesome to have my winter garden back. It takes a lot more thought and work in NE though 🙂

Looks like an awesome dip, will have to try it. Sadly the only types of tomatoes we get here are regular ones that don’t really taste nice. I can’t wait for spring to have good tomatoes once again around here.

I’m not a big fan of tomato’s unless it’s on a burger. I don’t do tomato soups or anything else related to tomatoes. Wish I could say that I like them but there’s just something about them that makes me say “ugh”. 🙂
I load my hamburgers with tomatoes, the more the better! Note everyone can like tomatoes…that’s okay, more for me. 🙂
Oh my goodness, nothing compares to fresh tomatoes from the garden. I have never heard of winter tomatoes! We sure don’t have any of those around here!
These were tomato plants we planted last spring and they are still going! They stopped producing fruit for a while during the fall, but now they are in full fruit again. It’s incredible, and we feel so lucky. 🙂

Yep, and with the heat we’ve had this week, we have a lot more tomatoes ripening… Yeah! 🙂
Your tomatoes are mouthwatering. They are plump and fresh. It must be great to have tomato food in cold weather.
It is pretty amazing! However, our weather the past couple of weeks has been unseasonably warm 70s and 80s. We’ve had more summer in January than we did all of June, July, August, and September put together. LOL 🙂
