Remember all those mornings when you were a kid and eating cereals for breakfast? It was great sitting down to your favorite bowl, but sometimes you wished the cereal was something a little bit more. Today, we are going to re-imagine cereal with my new recipe for Cracklin’ Oat Bran Vanilla Buttermilk Pancakes. You are going to love this breakfast dish, and your family will too.
Cracklin’ Oat Bran Vanilla Buttermilk Pancakes
A perfect recipe for an everyday breakfast or special brunch.
So, let’s go ahead and add a little crunch to your pancakes with great flavors for a satisfying start to the day. Kellog’s Cracklin’ Oat Bran Cereal is a great add-in for pancakes. The cereal is hearty enough to not get soggy in the pancake batter, and it provides additional fiber, whole grain, and protein. Surprise yourself and your senses.
Pancakes are quick and easy to make, but I have a little secret to make them even tastier. Plus, there is even a fun part to this recipe that your kids will love to help you with.
Cracklin’ Oat Bran Vanilla Buttermilk Pancakes
Here’s What You Need:
Buttermilk Pancake Mix, Egg, Water, Pure Vanilla Extract (my secret ingredient to delicious pancakes), Kellogg’s Cracklin’ Oat Bran Cereal.
NOTE: You can always use your homemade pancake mix / batter.
Optional Items:
Fresh Fruit (Peaches, Raspberries, Strawberries), Vanilla Greek Yogurt, Maple Syrup, Honey, or whatever toppings you like.
Let’s Make Pancakes!
We are going to start by getting our fruit prepared for topping the pancakes when they are hot off the griddle. I had fresh peaches, raspberries, and strawberries to work with, yum! There was a buy-one-get-one sale on boxed fruits at Albertsons that I could not resist. I got my fruit washed up, then sliced the strawberries and peaches.
I picked up my Cracklin’ Oat Bran at Albertsons too.
Then, you need to get your Cracklin’ Oat Bran ready for the pancake batter (this is where the kids come in). Place the cereal in a sandwich sized zippered baggy, fold it over to get the air out, and seal the bag. Then, let your kids gently hammer the cereal with the side of a wooden mallet / tenderizer. You want the cereal to be broken up into smaller pieces, but not pulverized. Set the baggy of crunchy cereal bits aside.
Light the fire under your griddle. You want it to be hot when your batter is ready.
Get your buttermilk pancake mix out, and follow the directions to make your batter. Add a teaspoon of pure vanilla extract. Once batter is mixed, add in about half of your Cracklin’ Oat Bran bits — you want to save some for garnishing your pancakes. Mix until blended.
Check your griddle to see if it is hot enough by spritzing a little water on the hot surface. The water should bubble, spit, and steam.
Scoop your pancake batter onto the griddle and get cookin’.
Topping the Pancakes:
I made two different types of toppers for our pancakes. They were both scrumptious and beautiful. Both plates are garnished with the additional Cracklin’ Oat Bran bits.
Peach and Raspberry with Vanilla Greek Yogurt and Honey
Strawberries with Maple Syrup
Now, this is an easy breakfast that you would be proud to serve to your family, friends, or even for holiday and special occasion entertaining. The Cracklin’ Oat Bran adds a little cinnamon flavor to the pancake along with the unexpected crunch — a great way to re-imagine cereal.
