A flavorful and easy chicken dish that is satisfying and "better for you". Recipe uses Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread.

Serves: 4-6
Ingredients:
Chicken (I used boneless, skinless chicken breasts)
2 Tablespoon - Shallot (minced)
1 Teaspoon - Spicy Brown Mustard
4 Teaspoons - White Balsamic Vinegar
1/2 Cup - Smucker's Fruit & Honey Strawberry Jalapeño Fruit Spread
2 Tablespoon - Chives (fresh and chopped)
Olive oil
Salt
Directions:
Pre-heat oven to 375° F.
Clean your chicken and salt and pepper to taste.
In a cast iron skillet, drizzle some olive oil. When skillet is hot, add chicken. You want to give the chicken a nice brown on both sides.
While the chicken is browning, mince your shallot.
Once chicken is browned, place the skillet into the oven to finish cooking.
Make sauce while chicken is in the oven.Making the Sauce:
In a small sauce pan, drizzle 1 Tablespoon Olive Oil, and heat pan.
Mince shallot, add to pan, and saute until translucent.
Add 1 Teaspoon of Spicy Brown Mustard.
Stir in 4 Teaspoons of White Balsamic Vinegar.
Blend.
Add 1/2 Cup Strawberry Jalapeño Fruit Spread.
Mix well.
Bring sauce to a boil, then turn down to lightly simmer for 5-6 minutes, until slightly thickened.
Stir in chives, and turn off heat.Your chicken should be finished, check to be sure. Let the chicken rest outside the oven for a few minutes to let juices settle. Plate the chicken and spoon glaze over the top. Garnish with fresh sliced strawberries and jalapeño, and a couple spears of chive.
