Poppyseed Dressing
Directions:
Chop Broccoli Florets so they are bite-sized.
Give the Candied Pecans a coarse chop.
In a large bowl, add broccoli, pecans, Cranberries, and Feta Cheese.
Mix lightly.
Drizzle with Poppyseed Dressing and toss to coat the salad.

Today, I’d like to share one such Moment of Yes!
My daughter, Rory, was born with a mitochondrial disorder — an energy metabolism disorder. What does that mean? Well, basically, she doesn’t always have the energy to make her body function properly. Because of this, she spent a lot of time in and out of the hospital while growing up, and that meant she missed a lot of schooling.
The lowest point of her illness came when she was in the sixth grade as she spent six months in the hospital. She was at a children’s hospital, so that meant she could get some sort of schooling. But here is the rub, to qualify for schooling, your admission must last for two weeks, then your schooling may begin. Once discharged in the hospital’s computer system, even if immediately readmitted, your two-week waiting period begins all over again. Just think how crazy that is for chronically ill kids.
Well, during this six months in the hospital, they would try to get Rory home and discharge her. Sometimes we didn’t even leave the hospital room before being readmitted, others we’d get part way home before turning around, and a couple of times we made it home for a few hours before returning. That meant her schooling was constantly disrupted, and then you have to take into account the fact that she was gravely ill and not up to school as well.
Once Rory’s health stabilized somewhat, she qualified for medical home teaching through special education at the public school. They promised us that she would be able to achieve her high school diploma, after all, she had until she reached 21 years of age. It was important to me, but more importantly, the high school diploma was important to Rory. She is a smart girl; she could do the work and accomplish her goal.
Fighting To Make Dreams Come True
Of course, receiving only 2-hours of teaching 2-days a week, makes for slow progress, but that is all the California school district allows. As she turned seventeen, the school district suddenly changed their tune about Rory getting her diploma. They wanted her to take the test for her GED and move on her way. Her teacher was appalled, I was upset, and Rory was staunch in her decision that a GED was not acceptable to her. She was determined to earn her high school diploma!
With Rory leading the charge, we persevered. She earned her high school diploma! It was a fantastic and emotional day, a definite Moment of Yes!
Today, Rory attends a local college where she works hard and has attained membership in the Honors Society, Phi Theta Kappa. Can we say, “Proud Mama?” Well Yes!

In a medium saucepan, melt Butter and toast Pecans over Medium-Low heat.
Once pecans are toasted, remove saucepan from heat.
Separate the toasted pecans from the butter and set aside.
Add Brown Sugar, Granulated Sugar, and Salt to the saucepan and return to a medium-low heat.
Sugar mixture will begin to melt. Stir frequently and watch carefully.
Bring to a rolling boil.
The sugars will turn to liquid and become an amber color. Do not burn.
Once the sugars have reached the desired color, turn heat to Low and pour in Heavy Cream and Water. The sugar mixture may harden, but it will liquify quickly again.
Mix in Toasted Pecans.
Stir constantly until caramel sauce thickens a bit. Be careful not to burn.
Remove from heat.
Notes:
If pouring hot Caramel Pecan Sauce into a glass jar, be sure to heat the jar first.
The sauce will thicken as it cools.
Keep unused sauce in the refrigerator.
Recipe may be doubled or tripled for parties or gift giving.

When I was a kid, it was always a great morning when you woke up and smelled German Pancakes cooking. Mmm, I’m getting hungry already. Why is that? Because we are making German Pancakes today. This recipe is easy, versatile, and delicious! That is why it has been a family tradition for generations.
German Pancakes are a crepe-like pancake, they are large and thin. You brush them with Gold’n Soft spreadable butter and add cinnamon and sugar, or jellies, jams, fresh fruit, or whatever you like. Roll the pancake, sprinkle with powdered sugar if desired and serve. They are perfect for a family with differing tastes because you make them individually. Have all one flavor (like me, cinnamon and sugar – yum!), or mix it up.
These pancakes are quick and easy, so they are a perfect choice for fueling the kids up before school, a leisurely weekend breakfast, or a holiday brunch.
Fillings of Choice: Cinnamon and Sugar; Jams; Jellies, Fruit, etc.
Powdered Sugar (Optional)
Syrup (optional)
Directions:
Crack open the Eggs into a bowl.
Add Milk to eggs, beat well.
Mix Flour and Salt in a separate bowl.
Stir flour and salt mixture into the milk and eggs gradually, until smooth.
The batter will be thin.
Heat a heavy 8-inch to 10-inch skillet and grease lightly with butter or oil.
Pour only enough batter to make a very thin pancake. Tip the skillet from side to side and around to help spread the pancake batter as needed.
Cook on one side (without flipping) until the pancake begins to blister or bubble. Flip the pancake and cook the other side until a light golden color. Do not over cook. You do not want them to get hard or crispy. NOTE: Pancakes cook very quickly, pay attention.
Remove from skillet and place on a board.
Once you have several pancakes stacked on the board, you can begin filling one at a time.
Brush one side only with Gold’n Soft butter.
Add about 1 to 2 Tablespoon(s) of your desired filling: Cinnamon and Sugar; Jam; Jelly; Fruit; etc. to the buttered side.
Roll pancake from one edge all the way across to the other side.
Place rolled pancake (or two) on a plate and dust with Powdered Sugar.
NOTE: If you have two cooks, one can be cooking the pancakes while the other fills and rolls them. Kids love to help with these pancakes.

This football decor for your bathroom is both festive and functional. Parties for the mega football game can go on for hours on end, and let’s face it, the more guests the better. So, even with the large mega rolls, you don’t want to have a bath tissue fumble. Your guests will not have to search for a new roll, they will be in plain view — 2 point conversion!
1 x 18 inches (I cut mine at 15 inches because I had extra height with a coupler).
2 x 8-1/2 inches
2 pieces of custom length to use as feet and will fit inside your base
1/2 Inch Schedule-40 PVC Fittings
1 Tee (slip fitting, no threads)
2 Elbows (slip fitting, no threads)
1 Side Outlet 90-Degree Elbow (slip fitting, no threads) **NOTE – if you can only get a Side Outlet Elbow that has two slips and one threaded, you will need to get a 1/2 inch coupler to convert the threaded port to slip. That is what I had to use.

How To:
Plan your project. The measurements above are what I used for mine, but depending on your base and space you may want yours smaller or larger. Test it out, and create a plan.
Remove any stickers from pipes or fittings.
Measure your PVC Pipe and mark where to cut with a pencil.
Cut the pipe using your cutters (a hacksaw will work too).
Once all lengths are cut, you can start assembling the goal post.
Slide the two 5-1/2″ pipe pieces into the horizontal ends of the Tee with the perpendicular open end facing down.
Add the Elbows to each end, with the open ends facing upward.
Slip the 8-1/2″ pipe pieces into the upright ends of the Elbows.
Place a Cap on the end of each upright.
Attach the long 18″ pipe length into the downward opening of the Tee.
Slide the Side Outlet Elbow onto the bottom of the long pipe. (If you need to attach a Coupler to the threaded port of the Side Outlet Elbow. Attach the Coupler to the pipe).
Place your additional varied size pipe pieces to the final two opening of the Side Outlet Elbow. These will be your feet to make the goal post stand and do not need to be perfect as nobody will see them.
Scuff the pipes and fittings so the paint will adhere.
PVC Pipe and Fittings are stamped. You will want to turn all the pieces so the stamping is placed at the back of the goal post. The feet should be positioned coming out the front of the goal post.
Squeeze the pipes and fittings together so they are tight.
Gently wipe the pipes and fitting with alcohol to remove any oils from your fingertips. This will help the paint adhere better.
Spray paint the goal post (check the tip below). Let it dry thoroughly.

TIP for Spray Painting:
Sack that blushing quarterback before he gets started.
Always apply spray paint in short bursts. Do a light coat just to fog the surface. Let that stand for a few seconds to get tacky then apply more, again in short burst of paint. Never hold the nozzle down for a steady spray, as that leads to blushing (a milky or hazy appearance and low gloss when dried).
Assemble the Goal Post Toilet Paper Holder Football Decor:
Place the constructed and painted goal post inside your base of choice (I used a basket that fit on top of the toilet tank).
Stuff the basket with old newspaper to fill the space.
Tuck the Football Turf over the newspaper and inside the basket sides. (I used football turf drink holders, and ripped the seem so they would lay flat).
Decorate with other Football Decor. (I drew a football play on a small sandwich board style chalkboard, added a couple of penalty flags, and a cutout football).

Today, we are going to re-imagine cereal with my new recipe for Cracklin’ Oat Bran Vanilla Buttermilk Pancakes. You are going to love this breakfast dish, and your family will too.
Cracklin’ Oat Bran Vanilla Buttermilk Pancakes
A perfect recipe for an everyday breakfast or special brunch.
So, let’s go ahead and add a little crunch to your pancakes with great flavors for a satisfying start to the day. Kellog’s Cracklin’ Oat Bran Cereal is a great add-in for pancakes. The cereal is hearty enough to not get soggy in the pancake batter, and it provides additional fiber, whole grain, and protein. Surprise yourself and your senses.
Pancakes are quick and easy to make, but I have a little secret to make them even tastier. Plus, there is even a fun part to this recipe that your kids will love to help you with.
Buttermilk Pancake Mix, Egg, Water, Pure Vanilla Extract (my secret ingredient to delicious pancakes), Kellogg’s Cracklin’ Oat Bran Cereal.
NOTE: You can always use your homemade pancake mix / batter.
Optional Items:
Fresh Fruit (Peaches, Raspberries, Strawberries), Vanilla Greek Yogurt, Maple Syrup, Honey, or whatever toppings you like.
Let’s Make Pancakes!
We are going to start by getting our fruit prepared for topping the pancakes when they are hot off the griddle. I had fresh peaches, raspberries, and strawberries to work with, yum! There was a buy-one-get-one sale on boxed fruits at Albertsons that I could not resist. I got my fruit washed up, then sliced the strawberries and peaches.
I picked up my Cracklin’ Oat Bran at Albertsons too.
Then, you need to get your Cracklin’ Oat Bran ready for the pancake batter (this is where the kids come in). Place the cereal in a sandwich sized zippered baggy, fold it over to get the air out, and seal the bag. Then, let your kids gently hammer the cereal with the side of a wooden mallet / tenderizer. You want the cereal to be broken up into smaller pieces, but not pulverized. Set the baggy of crunchy cereal bits aside.
Light the fire under your griddle. You want it to be hot when your batter is ready.
Get your buttermilk pancake mix out, and follow the directions to make your batter. Add a teaspoon of pure vanilla extract. Once batter is mixed, add in about half of your Cracklin’ Oat Bran bits — you want to save some for garnishing your pancakes. Mix until blended.
Check your griddle to see if it is hot enough by spritzing a little water on the hot surface. The water should bubble, spit, and steam.
Scoop your pancake batter onto the griddle and get cookin’.

1 Egg
1 Cup - Water
