Avocado Eggs Florentine Toast

A Quick and Easy Recipe to boost Energy and Alertness

 

So, here we are, back to school and heading quickly for the holiday season. And what does that mean? Extremely busy schedules, life on the run, and the need for quick and easy pick-me-ups that provide more energy and alertness. That is where this fantastic recipe and Gold Peak® Tea Lattes & Coffee come into play.

You’ve heard it before, breakfast is the most important meal of the day. But, still, you need lunch, dinner, and maybe even a snack. This delicious recipe is perfect for any time of the day. Avocado Eggs Florentine Toast is packed with protein and nutrients that make it a smart choice to help boost your energy.

 

Avocado Eggs Florentine Toast Recipe

 

Ingredients:

  • 1 – Avocado
  • 1 – Handful Fresh Spinach Leaves
  • 1/4 – Shallot
  • 1 – Roma Tomato
  • 4 – Eggs
  • Cracked Wheat Sourdough Bread
  • Salt
  • Pepper
  • Cooking Oil

Directions:

  1. Once you start cooking, things move very quickly, so have everything prepped and ready to go.
  2. Slice the Roma Tomato and Shallot, set aside.
  3. Chiffonade the Spinach, set aside.
  4. Separate 3 Egg Whites, add 1 Whole Egg (or you could use whole eggs), lightly beat. Set aside.
  5. Mash Avocado with a fork, set aside. (see my Avocado Tips & Tricks)
  6. Lightly spray skillet with Cooking Oil, heat skillet.
  7. Place 2 slices of Cracked Wheat Sourdough Bread (or your bread of choice) in the toaster to toast while you are cooking.
  8. Saute Shallots, then add Spinach, until wilted.
  9. Add Eggs to the pan and scramble soft, about 2 minutes.

Apples For Everything – It’s Apple Season!

The fall season is a great time for remembering those cherished moments with family and friends. I am sure some of those memories include apples in some way — apple picking, baking with apples, crafting, or even an aromatic body scrub or bubble bath.

Caramel Apple Crumbly Bread Recipe

I love the Fall Season! Everything about it is gorgeous and wonderful — the colors, the scents, the flavors, and the warmth of family and friends. Here is one of my favorite autumn bread recipes, but it is delicious any time of year! #SoFabSeasons

Caramel Apple Crumbly Bread

A Scrumptious Autumn Recipe

 

Want to make your home smell amazing? Bake this bread! This is a recipe I created as part of writing one of my books. My character, Mrs. Griffin, is famous for her baked delights, and her Caramel Apple Crumbly Bread does not disappoint.

The recipe is easy to prepare, and clean-up is a snap too. Your friends and family will love sharing this bread with you, and it makes a great homemade gift.

Caramel Apple Crumbly Bread Recipe

Ingredients:

Caramels, Apple Pie Filling, Caramel Sauce, Flour, Baking Powder, Baking Soda,  Salt, Granulated Sugar, Dark Brown Sugar, Butter, Eggs, Cinnamon, Cloves, and Nutmeg.

How-To:

  • Start by sifting your Flour into a large bowl.
  • Add the Baking Powder, Baking Soda, and Salt, mix well.
  • Whisk in the ground Cinnamon, ground Cloves, and ground Nutmeg until evenly combined; set aside and allow the flour mixture to become aromatic.
  • If using whole Caramels, cut them into pieces; set aside.

  • Pour Apple Pie Filling into a medium bowl, and use a pastry blender to chop the apples into smaller pieces.
  • Mix Dark Brown Sugar, Butter, and flour in a small bowl; set aside.
  • In another large bowl (I use my stand mixer), Blend butter and Granulated Sugar until creamy.
  • Add Eggs, one at a time, and beat slightly after each addition.
  • Spoon your chopped apple pie filling into the butter mixture, and stir to combine.
  • Scatter in the caramel pieces or bits, leaving a handful aside for the topping. Mix well.
  • Heavily butter the baking pan getting into every corner. Dust with flour.
  • Pour a thin layer of batter into the bottom of the loaf pan.
  • Preheat oven to 350° F

  • Make Caramel Sauce (see my recipe)
  • Add Caramel Sauce to remaining bread batter, swirling it in for marbling — do not stir thoroughly.
  • Pour remaining batter into the loaf pan
  • Crumble the dark brown sugar topping mixture over the top, and dot with remaining caramel bits or pieces.

  • Bake 50-70 minutes, until a toothpick comes out clean. (It is a moist type bread, so if you hit caramel or apple, the toothpick may not be completely clean).
  • Check your bread about 20-30 minutes into baking, if it is browning quickly, cover loosely with aluminum foil to slow browning. Keep in mind that this is a darker bread, however.
  • Let cool COMPLETELY in the baking pan on a wire rack.

Ingredients:
  • 1/3 Cup + handful - Caramels (cut into pieces or Caramel Bits) (handful for topping)
  • 1 (21 oz. can) - Apple Pie Filling
  • 1/2 Cup - Homemade Caramel Sauce (amount not exact, to desired)
  • 2 Cups + 2 teaspoons - Flour (2 tsp. for topping)
  • 2 teaspoons - Baking Powder
  • 1/2 teaspoon - Baking Soda
  • 1/2 teaspoon - Salt
  • 1/2 Cup - Granulated Sugar
  • 1/4 Cup - Dark Brown Sugar
  • 1 Stick (1/2 Cup) - Butter (softened) (1/4 cup - batter, 1 Tbs. - topping, pan)
  • 2 - Eggs
  • 1 teaspoon - Ground Cinnamon
  • 1/2 teaspoon - Ground Cloves
  • 1/2 teaspoon - Ground Nutmeg
Directions:
  1. Sift 2 Cups Flour into a large bowl.
  2. Add the Baking Powder, Baking Soda, and Salt, mix well.
  3. Whisk in the Ground Cinnamon, Ground Cloves, and Ground Nutmeg until evenly combined; set aside and allow the flour mixture to become aromatic.

1.) You can split this recipe into 2 small loafs. Reduce baking time to 25-40 minutes.

A wonderfully easy Caramel Sauce perfect for drizzling desserts, stirring into coffee or tea, adding to recipes, and more. Delicious!

Type: Sauce
Serves: 3/4 Cup
Ingredients:
  • 3/4 Cup - Granulated Sugar
  • 1/4 Cup - Dark Brown Sugar
  • 1 Cup - Boiling Water
Directions:
  1. Mix both Sugars and get the lumps out.
  2. Spread sugar evenly over the bottom of a heavy skillet (i use cast iron).
  3. Place over medium heat.
  4. Stir gently with a wooden spoon, moving sugar constantly to the hottest pat of the pan until melted to a syrup.
  5. Lower heat.
  6. Very gradually add Boiling Water.
  7. The sugar may become hard again, but it will melt in a few minutes.
  8. Stir constantly to avoid scorching.
  9. Simmer over low heat for 5 to 10 minutes (longer if needed) letting the hardened sugar re-melt, and allowing the syrup to reduce and thicken.slightly. (If it is too thick when cold, add a little hot water and boil again.
Notes
Clean-up may look daunting, but a little hot water and a scouring sponge melts the mess away in minutes.
