Caramel Pecan Pumpkin Roll Recipe

Easy as 1-2-3 and 100% Delicious!

 

Autumn has arrived! And with it comes good times, family fun, and great food. If you are looking for an easy dessert that packs a flavorful punch, you’ve got to try The Bakery at Walmart Pumpkin Cake Roll with Cream Cheese Filling and give it a homemade twist with the Caramel Pecan Sauce and a cold dollop of Reddi-wip® for something a little extra special.

You will love this Caramel Pecan Pumpkin Roll dessert. The caramel pecan sauce is quick and easy, so you can whip it up spur of the moment. You can also double or triple the recipe for large gatherings or gift giving — tis the season.

Caramel Pecan Pumpkin Roll Recipe

Making the Sauce

Ingredients:

  • 1/3 Cup – Chopped Pecans
  • 2 Tablespoons – Butter
  • 1/2 Cup – Brown Sugar (packed)
  • 1/2 Cup – Granulated Sugar
  • 1/4 Teaspoon – Salt
  • 3/4 Cup – Heavy Cream
  • 1/4 Cup – Water

Directions:

  1. In a medium saucepan, melt Butter and toast Pecans over Medium-Low heat.
  2. Once pecans are toasted, remove saucepan from heat.
  3. Separate the toasted pecans from the butter and set aside.
  4. Add Brown Sugar, Granulated Sugar, and Salt to the saucepan and return to a medium-low heat.
  5. Sugar mixture will begin to melt. Stir frequently and watch carefully.
  6. Bring to a rolling boil.
  7. The sugars will turn to liquid and become an amber color. Do not burn.
  8. Once the sugars have reached the desired color, turn heat to Low and pour in Heavy Cream and Water. The sugar mixture may harden, but it will liquify quickly again.
  9. Mix in Toasted Pecans.
  10. Stir constantly until caramel sauce thickens a bit. Be careful not to burn.
  11. Remove from heat.

Notes:

  1. If pouring hot Caramel Pecan Sauce into a glass jar, be sure to heat the jar first.
  2. The sauce will thicken as it cools.
  3. Keep unused sauce in the refrigerator.
  4. Recipe may be doubled or tripled for parties or gift giving.

To Serve:

Spoon the Caramel Pecan Sauce over the Pumpkin Roll. Slice the cake and serve with a cold dollop of Reddi-wip The Original or Extra Creamy.

Skittles Ice Cream Sandwiches

You Won’t Believe How Easy These Tasty Treats Are!

 

In my Game Day Party post, I included these amazing little frozen snacks. But, I wanted to share with you just how easy they are to make. You will be shocked! I know I was. I do have to confess, these Skittles Ice Cream Sandwiches had a slightly different beginning…

My original ideas was to let the ice cream sandwiches thaw just a little and push skittles onto the ice cream sides (creating a rainbow of polka-dots), and then, re-freeze them. This did not work. The whole Skittles were too heavy for the slightly melted ice cream, and they would not stay in place. What a mess I had! Then, Rory told me of something she had seen while cruising Pinterest that got her attention. I wish I had the PIN to link to, because they deserve some credit.

So, get out your Magic Bullet, Ninja, or whatever food processor you have, and let’s get busy!

Skittles Ice Cream Sandwich Recipe

This recipe has only TWO INGREDIENTS:

  • Ice Cream Sandwiches
  • Skittles

Here’s what you do:

  • Line a baking dish with Wax Paper
  • Keep your Ice Cream Sandwiches in the Freezer. Work with them from there, one at a time

  • Take a small handful of Skittles and put them in your processor.

  • Pulse it a few times until you have Skittles Powder with some tiny chunks left in it. You will be surprised how fast this goes!
  • Pour the Skittles powder into a container with an air-tight lid
  • Repeat and Make enough Skittles powder to coat the edges of your ice cream sandwiches

  • Put some of the Skittles powder onto a small plate
  • Take your first Ice Cream Sandwich out of the freezer, and unwrap it. I cut my sandwiches in half to have smaller snack-size treats.

  • Tap the ice cream edges in the Skittles powder until all sides are covered

  • Place Skittles crusted sandwich in the wax paper lined dish and put into freezer
  • Repeat these steps until all of your Skittles Ice Cream Sandwiches are made
  • Once finished, cover the dish with Plastic Wrap

Sour Cream, Cilantro and Parsley Potatoes on the Grill

Sour Cream, Cilantro and Parsley Potatoes on the Grill

Last week when Luke and I barbecued our Citrus, Chili, Cilantro Chicken, we made these delicious potatoes to go with it. You are going to love this simple recipe!

Ingredients~

  • 1 Bag Red Potatoes
  • Cilantro
  • Italian Flat Leaf Parsley
  • 2 Tsp. Butter
  • 1 Tsp. Sour Cream
  • Coarse Sea Salt to taste
  • Freshly Ground Pepper
  • 3/4 to 1 Cup Sour Cream

Directions~

Potatoes
Wash Potatoes and cut into bite-sized chunks. Place Potato chunks on a large sheet of Heavy Duty Aluminum Foil. Chop Cilantro and Parsley (you will use this for the potatoes and the sauce). Put a heaping handful of both Herbs on the potatoes. Add Butter and 1 Tsp. Sour Cream on top of potatoes and herbs. Salt and Pepper to taste. Give a light mix of ingredients with your hands so you don’t rip foil (butter and sour cream will not be thoroughly mixed).


Making the Packet: Pull long sides of foil loosely up around potatoes so the edges meet at the top. Fold over the edges to seal (don’t make this tight to the potatoes). Then pull up and fold in the sides to seal them.

Place your Potato Packet on the top rack of your Grill. They will take about 40-50 minutes to cook.


Sauce
Add remaining Cilantro and Parsley to 3/4 to 1 Cup of Sour Cream, stir to combine. Refrigerate until serving.

Serving~

I top the grilled potatoes with a dollop of the herb sauce, and leave the rest of the sauce on the side for people to add to their taste.
