Sweet Potato and Turkey Meatball Recipe

Not Your Usual Meatball

 

Oh, yum! You will absolutely love these scrumptious sweet potato and ground turkey meatballs. They are perfect for appetizers, pasta, meatball sandwiches, or just on their own.

This recipe is super easy to make with just a few ingredients. You can even make a larger batch and freeze them. Quick and easy for those busy nights.

Sweet Potato and Turkey Meatball Recipe

Ingredients:

  • 1 – Large Sweet Potato
  • 1 lb. – Ground Turkey
  • 1/4  Cup – Breadcrumbs
  • 1 Egg
  • 1/8 teaspoon – Garlic Powder
  • 1/4 teaspoon – Salt
  • 1/4 teaspoon – Pepper
  • Olive Oil

Directions:

  1. Wrap the raw Sweet Potato in a couple of wet paper towels. Place in a dish with a little bit of water. Microwave for 8 to 10 minutes, until sweet potato is tender.
  2. Peel the sweet potato and mash.
  3. Mix the mashed sweet potato, Ground Turkey, Egg, Breadcrumbs, Garlic Powder, Salt, and Pepper until fully incorporated.
  4. Roll small amounts of the mixture in your hands to form meatballs.
  5. Heat a skillet with Olive Oil over medium heat.
  6. When the pan is hot, place a few meatballs in the skillet to brown. Do Not overcrowd the meatballs so you have room to turn and roll for browning on all sides.
  7. Once browned, remove from skillet and place in a microwave-safe or oven-safe dish to finish cooking in your desired appliance.
  8. If finishing the cooking by microwave, cook on high for 3 to 5 minutes, or until done.
  9. If by the oven, place the meatballs in a 400-degree oven for 8 to 10 minutes, or until cooked through.

Today, I’d like to share one such Moment of Yes!

My daughter, Rory, was born with a mitochondrial disorder — an energy metabolism disorder. What does that mean? Well, basically, she doesn’t always have the energy to make her body function properly. Because of this, she spent a lot of time in and out of the hospital while growing up, and that meant she missed a lot of schooling.

School Is A Challenge

The lowest point of her illness came when she was in the sixth grade as she spent six months in the hospital. She was at a children’s hospital, so that meant she could get some sort of schooling. But here is the rub, to qualify for schooling, your admission must last for two weeks, then your schooling may begin. Once discharged in the hospital’s computer system, even if immediately readmitted, your two-week waiting period begins all over again. Just think how crazy that is for chronically ill kids.

Well, during this six months in the hospital, they would try to get Rory home and discharge her. Sometimes we didn’t even leave the hospital room before being readmitted, others we’d get part way home before turning around, and a couple of times we made it home for a few hours before returning. That meant her schooling was constantly disrupted, and then you have to take into account the fact that she was gravely ill and not up to school as well.

Once Rory’s health stabilized somewhat, she qualified for medical home teaching through special education at the public school. They promised us that she would be able to achieve her high school diploma, after all, she had until she reached 21 years of age. It was important to me, but more importantly, the high school diploma was important to Rory. She is a smart girl; she could do the work and accomplish her goal.

Fighting To Make Dreams Come True

Of course, receiving only 2-hours of teaching 2-days a week, makes for slow progress, but that is all the California school district allows. As she turned seventeen, the school district suddenly changed their tune about Rory getting her diploma. They wanted her to take the test for her GED and move on her way. Her teacher was appalled, I was upset, and Rory was staunch in her decision that a GED was not acceptable to her. She was determined to earn her high school diploma!

With Rory leading the charge, we persevered. She earned her high school diploma! It was a fantastic and emotional day, a definite Moment of Yes!

Today, Rory attends a local college where she works hard and has attained membership in the Honors Society, Phi Theta Kappa. Can we say, “Proud Mama?” Well Yes!

Canned tuna is a favorite of many people around the world. When I was in college, I remember regularly buying canned tuna because it has many uses. It can serve as a snack, a standalone dish, and as a sandwich spread.

Do you want a tuna dish that’s different? Then check out this fried tuna pancakes recipe. It is a nutritious dish that you can prepare and cook in less than an hour. And it’s so delicious that your kids will love it, too.

Is canned tuna safe to consume?

Before we get into the recipe, I would like to focus first on canned tuna. Is it safe to consume? Or should you just opt for fresh tuna?

I mentioned this because there are some people who believe that canned tuna contains mercury which can harm the nervous system and other parts of the body. Mercury occurs in the environment particularly the oceans, and fishes like tuna can absorb it.

The good news is that canned tuna is very healthy and safe to consume because it doesn’t have mercury. And according to dietitians, fresh tuna steak is more likely to have mercury than canned tuna as the latter is made with younger fish.

Experts also agree that consuming a can of tuna every week is alright, even if you are pregnant.

What are the health benefits of canned tuna?

Canned tuna is also packed with many nutrients that can do a lot of wonders to your body. It contains omega-3 fatty acids that promote good brain function. This is an essential fatty acid that has also been shown effective in reducing inflammation in the body as well as lower risks of heart disease and cancer.

Canned tuna also has high levels of niacin, a B-vitamin that helps keep the digestive system healthy. Niacin can also keep the skin glowing and our nerves well-functioning. In fact, a three-ounce serving of canned tuna has about 11 milligrams of niacin.

Another good seafood source of niacin is canned oysters.

Finally, canned tuna has a good amount of vitamin B 12 that supports normal brain function and aids in red blood cell production.

How to buy canned tuna

While canned tuna is safe and healthy to eat, this doesn’t mean that you should just get and buy any canned tuna you see on the grocery shelves.

There are plenty of tuna species, but the best one is skipjack or light tuna. Fortunately for all of us, this is also the most commonly found in tuna cans on grocery store shelves. There’s just one problem with this tuna—it has a light gray color that is slightly unappealing to most people. But if you could not care less about the color, then I suggest you go for a canned tuna using this tuna type.

I also recommend that you shop for those canned tuna products caught by troll or pole-and-line. This is considered as the most environment-friendly and sustainable option. As such, canned tuna with labels such as “school caught” are the ones you should be getting.

You should also think twice about getting flavored tunas since these have excessive amounts of sugar and salt.

 

Fried Tuna Pancakes with Potato, Onion, and Garlic Recipe

This recipe takes about 20 minutes of preparation and 30 minutes of cooking time. It yields four servings.

Ingredients:

  • One large potato, peeled and cubed
  • Four cans of tuna, drained
  • One egg
  • 1/4 cup of chopped onion
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of dry breadcrumbs
  • 1 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of Italian seasoning
  • 1/4 teaspoon of cayenne pepper
  • 1 teaspoon of Italian seasoning
  • Salt and black pepper to taste

Step by step guide:

  1. Place the cubed potato in a small pot. Add salted water and cover it. Bring this to a boil before reducing the heat to medium low. Simmer until tender, or for around 20 minutes.
  2. Drain and let the steam dry for 1-2 minutes. Mash the potato using a fork in a bowl.
  3. Combine the tuna, onion, egg, Dijon mustard, garlic powder, Italian seasoning, bread crumbs cayenne pepper, salt, and pepper into the potato.

Tip 1: If there is no Dijon mustard in your pantry, you can totally use these mustard substitutes like wasabi, honey mustard, etc.

  1. Divide this into eight equal portions. Shape them into patties.
  2. Heat the olive oil in a skillet placed over medium heat. Fry the patties for about 3 minutes per side, or until they turn brown and crispy.

Tip 2: Pour enough olive oil to coat the skillet so that the patties won’t easily break apart.

Instead of going food shopping and asking every vendor whether a particular snack is gluten free, how about you make the gluten free meals yourself for a change. Secretly Skinny Double Chocolate Brownies

It does sound impossible that chocolate brownies could be delicious yet gluten free and refined, sugar-free at the same time. Well, it is not impossible with the right recipe. One aspect that makes it gluten-free is the use of oatmeal as a replacement for flour. Yogurt and applesauce instead of oil and powdered stevia and coconut sugar instead of white sugar. So as you can see it is not a mystery as it may seem, making a healthy, tasty, weight shedding chocolate brownie. This is how you do it:

Double Chocolate Brownies Recipe

Ingredients

  • ½ a cup old fashioned oatmeal
  • ½ a cup cocoa powder
  • ½ a cup plain Greek yogurt
  • ¼ a cup coconut sugar
  • ¼ a cup almond milk (preferably cashew milk)
  • 3 table spoons of egg whites
  • 2 table spoons of unsweetened applesauce
  • 1 tea spoon baking powder
  • ½ a tea spoon of baking soda
  • 1 tea spoon of vanilla extract
  • 1/8 a tea spoon of stevia powder
  • 4 table spoons of Enjoy Life mini chocolate chips

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly spray an 8×8 glass pan with non-stick cooking spray. Then set the pan aside.
  2. Add all ingredients except the chocolate chips to your food processor and blend until all ingredients are incorporated. Then add in 2 table spoons of your chocolate chips and pulse just until chips are incorporated into the batter.
  3. Pour batter into the greased glass pan. Smooth out the batter and top with the remaining 2 table spoons of mini chocolate chips.
  4. Bake for 20 minutes or until top has cracked. The brownies should be set, but an inserted toothpick should not come out completely clean. If it does, they are over baked.

You could search the world to find gluten-free donuts that are also low in calories or better yet you can bake some within the confines of your home. With the right ingredients and following the instructions as given you would not miss a thing. Plus your kids will just love these donuts; it is a guarantee that they will not get enough of them. And the best part is that you would not have to worry about them adding weight or any other health issues from these donuts. Though organic raw apples, blue grapes, and grape fruits do not make it on many people’s shopping list due to their availability and cost, they taste better when taken with these yummy donuts as juice while sitting in your lawn grass. That has been taken care of by this recipe for six.

  • 1 table spoon of sprinkles which is optional, but it makes it extra special for kids

  3. Grease donut pan with extra-virgin olive oil spray. Of course, it is a non-stick pan, but grease it anyhow, or the donuts will be a stinker to remove!
  4. Scoop batter into greased donut pan or put the mixture in a Ziploc bag.
  5. Cut the corner off of the bag and pipe into the donut pan wells.
  6. Bake @ 375F for 30-32 minutes or until donuts are fairly hard to the touch and golden brown. They may seem over baked, but the inside will be just right.

  1. Mix together glaze ingredients and pour onto a small plate.
  2. Dip one side of the donut into the glaze and then dip that same side in coconut sugar or top with colored sprinkles for the kiddos instead. Enjoy!

Creamy Coconut Flavored Protein Smoothie

This is an easily prepared breakfast option that seems more like a delectable treat, rather than the nutritious repast that it actually is. Not only will you find this healthy morning shake with a crushed ice right from your home cooler to be a delicious offering, but also fulfilling, due in part, to the respectable portions of protein (21 grams) and fiber (7 grams) that each serving contains.

Here’s what you will need to get started:

  • 1 scoop cup of protein powder (vanilla)
  • 1 fresh banana (frozen)
  • ¾ cup of coconut milk (non-sweetened)
  • 1 ½ tablespoon of coconut oil
  • 2 tablespoons of coconut flakes (non-sweetened)
  • 1 tablespoon of coconut cream (this is optional)
  • ½ cup of crushed ice

Once you have all of your ingredients assembled and ready to go, the next couple of steps quick and easy. First, take all of your ingredients, except the coconut cream, and place in a blender. Blend your ingredients until they attain a creamy consistency.

Next, pour the contents from the blender into a large cup or glass. Separately, mix your coconut cream in a small bowl until contents become fluffy. Finally, pour the coconut cream on top of your smoothie. Your morning protein smoothie is now ready to serve.

You will need the following ingredients to get started:

  • ½ scoop cup of your favorite protein powder (vanilla works best)
  • 2 tablespoons of coconut flour
  • 1/3 cup of oat flour
  • ¾ teaspoon of vanilla extract
  • ¼ cup of almond milk (non-sweetened)
  • 2 tablespoons of coconut milk yogurt

Now it is time to add in your blueberries (or other berry options if you so desire).

Stir to combine all your ingredients. Let your mixed batter sit for about 5 minutes. While you are waiting for a batter, you can begin prepping your cooking pan by preheating and adding cooking spray (preferably non-stick). You are now ready to begin cooking. Pour ¼ to 1/3 cup of batter per pancake into your cooking pan. Cook each side of your pancakes for approximately 3 minutes or until the coloring becomes brownish gold. Now you are ready to serve and enjoy.

Happy Healthy Pets – Jinx and Josie

Hey, everyone! It’s us, Jinx and Josie, we had a fun day at Kriser’s Natural Pet, and want to share how you can have happy healthy pets too.

We got new harness leashes! Is that a good thing? Jinx and I wondered. After all, we are just starting to have a little outside time in the gazebo. We like the fresh air, laying in the sunlight, smelling flowers from the potted plants, and chasing whatever bug crawls or flies by. But, if we are out too long, we start to get a little nervous.

Now, with these new harnesses, will mom, dad, and Rory want to take us out more often? Exercise is one thing, trash truck monsters are another! We hate Thursdays (that is when the big blue monsters roar loudly through the neighborhood, and give the trash cans a Disney ride with their massive claws). It’s scary!

 

An Adventure with Jinx & Josie:

We tried our harnesses on, and mom let us walk on the grass–that’s a weird feeling. LOL Next thing we knew, we were being placed in our kennel in the car. Yep, even pets need “car seats” for safe travel. We took our 20% OFF Coupon and headed to our local Kriser’s Natural Pet Store for a shopping spree! YIPPEE!!! What girl doesn’t love to go shopping.

Jinx’s favorite part was the loads of different types of food and treats, and the Pack was very willing to share the differences and benefits of each. They even have a bakery section, COOKIES!

Sunflowers – How To Grow These Healthy Giants

How to Grow Healthy Sunflowers

Add some wow factor to your garden!

 

One of the greatest joys of gardening is watching something you planted from a tiny seed grow and reach amazing heights – even towering over you. There’s no better way to get that wow factor in your garden than to plant sunflowers. Some varieties can reach 10 to even 16 feet high! To grow large, healthy sunflowers, though, it pays to follow a few best practices to give them the best chance to thrive.

 

Choose the Right Location

 

It should come as no surprise that sunflowers do best in a sunny location. They need at least six to eight hours of direct sunlight per day – the more the better. Sunflowers also need a soil that drains well, so planting them on a slope will often help keep their roots from becoming too waterlogged.

 

Another advantage of planting sunflowers on a slope is that picking the right plants can help reduce soil erosion and minimize flooding in other parts of your yard. Sunflowers have long taproots that anchor deeply and soak up a lot of excess water, which can help preserve the rest of your landscape.

 

Plant in Mid-Spring for Best Results

 

Sunflowers aren’t frost-hardy, so it’s best to wait to plant until all danger of frost has passed in your area. Prepare your soil by adding a low-nitrogen fertilizer and lots of compost. Turn these into the soil with a spade to loosen the planting area and allow roots to flourish. Press sunflower seeds into the prepared soil to about an inch in depth, making sure to plant seeds in rows 6 inches apart. Cover seeds with soil and water well.

 

If garden pests like birds, chipmunks or squirrels disturb your seeds, cover your planting bed with bird netting or chicken wire to protect them. Water seeds daily until they sprout.

 

 

Support Your Sunflowers as They Grow

 

Once your sunflowers sprout, they don’t need much care unless you are experiencing a drought. An inch of rainfall per week is the right amount, but if you get less, water your sunflowers deeply once per week to make up for the deficit.

 

When your sunflowers reach a foot in height, it’s time to thin them. For a row of dwarf sunflowers, you should pull out the weaker seedlings and leave the strong plants at a spacing of about one per every foot. For giant sunflowers, thin to one every 30 inches or so. It’s important to create enough room for your sunflowers to reach their full potential, so don’t skip this important step – even if it seems sad to kill half of your seedlings.

 

As your sunflowers bloom, they will need staking to keep them upright. Sometimes the seed heads get so heavy that the stems bend or break, so use strong bamboo stakes to hold them upright. Simply insert the stake into the ground a few inches from the stem and use garden twine to tie the stem to the stake every 6 inches or so. This will also help your sunflowers if you live in a windy area.

 

 

Protect Sunflowers From Predators

 

Sunflowers are tempting food sources for local garden critters, so you may need to protect them, especially if you are interested in harvesting the seeds for yourself. To do this, you can spray plants with a hot pepper spray or other squirrel deterrent. You’ll need to reapply ever few days, or after a rainfall.

 

To keep birds away from your sunflower seeds, tie a paper bag over the flower head as the seeds begin to develop. This won’t allow you to enjoy your flowers for their beauty, but it’s usually the only way to keep the local birds from making off with your crop. If you’ve planted a whole bed of sunflowers, you can select just a few to protect and allow the birds to eat the rest while you enjoy the flowers for their decorative features.

 

Once you get the hang of growing sunflowers, you‘ll never want to be without them. They are a brilliant feature in any garden, and they’re loads of fun for kids to enjoy – especially if they get to snack on the seeds in the autumn. Give these giant beauties a try for a fun garden project this summer.

The Best Ideas for Simple Organic Meals

 

To make things even more difficult, I have made a firm decision to prepare healthy organic dishes for my family, so I have to consider many things when cooking. Although ordering a pepperoni pizza and watching TV would be the simplest option, I have found that there are many healthy and delicious meals which can be prepared in no time.

 

Here are some great ideas for your organic Sunday dinner.

Japanese Rice

This is such a simple meal that requires almost no time for the preparation and it is cooked in about 40 minutes. I prefer to use brown organic rice because it is very low in saturated fat and cholesterol.

Ingredients:

  • 1 cup uncooked rice
  • 2 tbsp finely diced carrots
  • 1 cup frozen peas
  • 2 beaten eggs
  • 1 ½ tbsp butter
  • ½ cup diced onion
  • 2 tbsp soya sauce
  • Salt and pepper

Preparation:

Cook the rice for about twenty minutes. Season with salt. Leave it to cool in the refrigerator. Scramble the eggs in a pan over medium heat. After the rice is cooled, add peas, carrots, onion and scrambled eggs and mix all the ingredients in a bowl. Melt the butter in a frying pan, add a dash of salt and pepper and soya sauce. Pour the rice mixture in the pan, and cook for 6 to 7 minutes. You can serve it in rolls.

This is actually my favorite recipe, because I am crazy about both chickpea because it is packed with magnesium, iron, phosphate, zinc, calcium and vitamin K, and it is delicious. I cook this meal using Honest To Goodness coconut oil, because I am sure that it is as healthy and natural as it gets.

Ingredients:

  • 3 cups cooked and drained chickpeas
  • 1 head cauliflower
  • 1 minced shallot
  • 4 minced garlic cloves
  • 1 tsp curry
  • 1 tsp red chili flakes
  • 1 tsp sea salt
  • ¼ tsp turmeric
  • 1 cup coconut milk
  • 1 ¼ tbsp coconut oil

Preparation:

Cook the cauliflower for 3 minutes. Heat the oil in a sauté pan on medium heat and add all the ingredients but the cauliflower, chickpeas and coconut milk and cook until everything is translucent. After, add the cauliflower and cook for another 3 minutes. Then add chickpeas, stir and cook for 3 minutes more and deglaze with coconut milk.

Greek Pizza

Well, sometimes you have to have pizza, but if you do, make it a healthy one. Kids love it, and it is a good way to make them eat spinach, which is important for bone health, skin, hair, etc.

Ingredients:

  • Organic pizza dough (buy prepared or prepare by yourself)
  • 1 ½ cups yogurt
  • 1 cup spinach
  • 4 ounces feta cheese
  • 1 cup diced tomatoes
  • 2 ounces diced black olives
  • ½ cup sliced red onion
  • 1 tsp fresh peppermint leaves

Preparation:

Pre-bake the dough for about 10 minutes and set aside. Mix spinach and yogurt in a mixing bowl and spread it on a partially baked crust. Sprinkle with feta cheese, diced tomatoes, diced olives, sliced onions and peppermint leaves. Put it in the oven and bake for 10 to 15 minutes.

  • 1 ½ cups yogurt
  • 1 cup spinach
  • 4 ounces feta cheese
  • 1 cup diced tomatoes
  • 2 ounces diced black olives
  • ½ cup sliced red onion
  • 1 tsp fresh peppermint leaves
Directions:
  1. Pre-bake the dough for about 10 minutes and set aside.
  2. Mix spinach and yogurt in a mixing bowl and spread it on a partially baked crust.
  3. Sprinkle with feta cheese, diced tomatoes, diced olives, sliced onions and peppermint leaves.
  4. Put it in the oven and bake for 10 to 15 minutes.

I know that I sometimes have trouble turning off my brain at night. Making sure I have things organized and under control helps keep stress away so my brain can get some rest. Doing a little reading before bed is always a help.
