Sweet Potato and Turkey Meatball Recipe

Not Your Usual Meatball

 

Oh, yum! You will absolutely love these scrumptious sweet potato and ground turkey meatballs. They are perfect for appetizers, pasta, meatball sandwiches, or just on their own.

This recipe is super easy to make with just a few ingredients. You can even make a larger batch and freeze them. Quick and easy for those busy nights.

Sweet Potato and Turkey Meatball Recipe

Ingredients:

  • 1 – Large Sweet Potato
  • 1 lb. – Ground Turkey
  • 1/4  Cup – Breadcrumbs
  • 1 Egg
  • 1/8 teaspoon – Garlic Powder
  • 1/4 teaspoon – Salt
  • 1/4 teaspoon – Pepper
  • Olive Oil

Directions:

  1. Wrap the raw Sweet Potato in a couple of wet paper towels. Place in a dish with a little bit of water. Microwave for 8 to 10 minutes, until sweet potato is tender.
  2. Peel the sweet potato and mash.
  3. Mix the mashed sweet potato, Ground Turkey, Egg, Breadcrumbs, Garlic Powder, Salt, and Pepper until fully incorporated.
  4. Roll small amounts of the mixture in your hands to form meatballs.
  5. Heat a skillet with Olive Oil over medium heat.
  6. When the pan is hot, place a few meatballs in the skillet to brown. Do Not overcrowd the meatballs so you have room to turn and roll for browning on all sides.
  7. Once browned, remove from skillet and place in a microwave-safe or oven-safe dish to finish cooking in your desired appliance.
  8. If finishing the cooking by microwave, cook on high for 3 to 5 minutes, or until done.
  9. If by the oven, place the meatballs in a 400-degree oven for 8 to 10 minutes, or until cooked through.

It was so nice to plop the crushed garlic into the pan without the garlic smelling hands. I also used the parsley cubes for our dinner. Here was our menu, Lemon Parsley Chicken, Garlic Mashed Potatoes, and Parslied Carrots. It was delicious!

Lemon Parsley Chicken Recipe:

Ingedients:

  • 2 Chicken Breasts
  • Dorot Gardens Parsley
  • 1 Large Lemon
  • Salt
  • Pepper
  • Olive Oil

Directions:

  1. Clean Chicken and pat dry.
  2. Slice half the Lemon into several slices. Reserve the other half for squeezing juice.
  3. Heat cast iron skillet with a little Olive Oil.
  4. Salt and Pepper chicken.
  5. Squeeze a little lemon juice into the skillet.
  6. Cook the chicken breasts over medium heat. Let them stand on one side to get good color before  turning to brown the other side.
  7. Squeeze lemon juice over breasts periodically.
  8. Add a cube of parsley to the breasts. Use the lemon slices to help spread the parsley over the chicken breasts.
  9. Make sure chicken breasts are fully cooked, and enjoy!

Memories, Sentiment, and a Hutch

I am sure you all have something that reminds you of a special time, a special place, or a special someone. Whether it is a trinket, something handed down through the generations, or maybe even a piece of furniture, these items are a reflection of you.

When I was a kid, I loved our trips to my grandparents’ farm in Mississippi. It was so different from Southern California. Everything enthralled me, from the airplane ride to the long drive from Jackson to Carthage. We traveled through the beautiful Natchez Trace, an Indian reservation, and dirt roads to get to the farm. I would always think of that old song, “Over the river and through the woods, to grandmother’s house we go…” (You sang those words in your head, didn’t you?) These sights and sounds were just the beginnings of a wonderful time of family, joy, and memory making.

My grandmother was a hard-working woman, and I liked following her around the farm helping with the chores. I’m not sure I helped all that much, but we had fun together just the same. When dinner time came around, grandma always asked us kids to set the table. Now, grandma was a woman of the Depression Era; she did not have a lot of fancy stuff, but what she had, she kept in a narrow hutch in her kitchen dining area.  That was the one piece of furniture I wish I could have been blessed with, but my cousin was the lucky recipient.

Loving Reflection

One day, I found a hutch that was very similar and I fell in love. I had to have that piece of furniture, and I have cherished it ever since. Even though it is not my grandmother’s hutch, it reminds me of her and all the wonderful things we did and shared. Like my grandmother, I entrust the care of my prized hutch and the things I display on and in it to Pledge® Lemon Clean Furniture Spray. The lemon fresh scent takes me right back to grandma’s kitchen, when I’d pull open the silverware drawer in her hutch. Lemon Ricotta Cookies

A Deliciously Fresh Recipe

 

A week or so ago, I told you about our little mini family reunion, and the ever-so-yummy S’mores Cookies I made for the family. If you missed it, be sure to check it out. These Lemon Ricotta Cookies are another one of the cookies I took for the get-together. Luke’s dad really loved these cookies. The smirkish grin he got, when he walk by and snagged one, made me giggle.

This recipe is easy to make and packs a big punch of freshness in every bite. The lemony scent and flavor keeps you coming back for more. Lemon Ricotta Cookies are a perfect choice for a non-chocolatey treat.

Lemon Ricotta Cookies Recipe

Ingredients:

Granulated Sugar, Lemons (for juice and zest), Flour, Baking Powder, Salt, Butter, Eggs, Ricotta Cheese, Powdered Sugar.

Directions:

  • Preheat oven to 375° F.
  • Line baking sheets with Parchment Paper.

  • Zest the rinds of 3-5 Lemons (enough to get 3 – 4 tablespoons of zest).
  • In a medium bowl, pour 2-Cups Granulated Sugar.
  • Add 2 – 3 Tablespoons Lemon Zest to sugar, and mix well with your fingertips.
  • Set aside and stir occasionally with fingertips. Allow sugar to become very fragrant.
  • Whisk together 2 1/2 Cups Flour, 1 teaspoon Baking Powder, and 1 teaspoon Salt in a medium bowl.
  • In a large bowl (or stand mixer), combine 1 stick Butter and the prepared Lemon Sugar. Beat until light and fluffy.
  • Add 2 Eggs, one at a time, mixing slightly after each addition.

  • Mix in 15 ounces (1 container) Ricotta Cheese and 3 Tablespoons Lemon Juice until incorporated.
  • Stir in dry ingredients a little at a time, until just combined.
  • Spoon dough onto prepared baking sheets (about 1 1/2 – 2 Tablespoons for each cookie).
  • Bake for 13 – 15 minutes, until just slightly turning golden at the edges.
  • Remove from the oven, let cool on baking sheets for 10 minutes.
  • Transfer to wire racks (placed on top of wax paper), and allow to cool completely.
  • Prepare the Lemon Glaze.

For the Glaze:

  • Sift 1 1/2 Cups Powdered Sugar into a small to medium bowl.
  • Add 3 Tablespoons Lemon Juice, and  1 Tablespoon Lemon Zest.
  • Mix well.

  • When cookies are cool, drizzle glaze over the tops of each cookie.
  • Allow glaze to dry.

  • 2-1/2 Cups - All-purpose Flour
  • 1 teaspoon - Baking Powder
  • 1 teaspoon - Salt
  • 1 Stick - Butter (softened)
  • 2 - large Eggs
  • 15 Ounces (one container) - Ricotta Cheese
  • 1-1/2 Cups - Powdered Sugar.
Directions:
  1. Preheat oven to 375° F.
  2. Line baking sheets with Parchment Paper.
  3. Zest the rinds of 3-5 Lemons (enough to get 3 - 4 tablespoons of zest).
  4. In a medium bowl, pour 2-Cups Granulated Sugar.
  5. Add 2 - 3 Tablespoons Lemon Zest to sugar, and mix well with your fingertips.
  6. Set aside and stir occasionally with fingertips. Allow sugar to become very fragrant.
  7. Whisk together 2 1/2 Cups Flour, 1 teaspoon Baking Powder, and 1 teaspoon Salt in a medium bowl.
  8. In a large bowl (or stand mixer), combine 1 stick Butter and the prepared Lemon Sugar. Beat until light and fluffy.
  9. Add 2 Eggs, one at a time, mixing slightly after each addition.
  10. Mix in 15 ounces (1 container) Ricotta Cheese and 3 Tablespoons Lemon Juice until incorporated.
  11. Stir in dry ingredients a little at a time, until just combined.
  12. Spoon dough onto prepared baking sheets (about 1 1/2 - 2 Tablespoons for each cookie).
  13. Bake for 13 - 15 minutes, until just slightly turning golden at the edges.
  14. Remove from the oven, let cool on baking sheets for 10 minutes.
  15. Transfer to wire racks (placed on top of wax paper), and allow to cool completely.
  16. Prepare the Lemon Glaze.

    For the Glaze:

  17. Sift 1 1/2 Cups Powdered Sugar into a small to medium bowl.
  18. Add 3 Tablespoons Lemon Juice, and 1 Tablespoon Lemon Zest.
  19. Mix well.
  20. When cookies are cool, drizzle glaze over the tops of each cookie.
  21. Allow glaze to dry.

Grilled Salmon Kabobs & Lemon Asparagus Couscous Salad With Tomatoes

A Scrumptious Summer Supper

I wanted to share with you the lovely summer meal that Luke and I had Wednesday night. We grilled up Salmon Kabobs and made an amazing Lemon Asparagus Couscous Salad with Tomatoes. It was delicious, filling, and super healthy! I hope you will enjoy it as much as we did.

Grilled Salmon Kabobs

Ingredients

  • 2 Tbs. – Fresh Oregano, chopped
  • 2 Tbs. – Sesame Seeds
  • 1 tsp. – Cumin, ground
  • 1/4 tsp. – Red Pepper Flakes, crushed
  • 1-1/2 Lbs. – Wild Salmon Fillet, skinned and cut into 1-inch cubes
  • 2 – Lemons, very thinly sliced into rounds
  • Olive Oil cooking spray
  • Coarse Sea Salt, to taste
  • 16 – Bamboo Skewers, soaked in water for 1 hour.

Directions
  • Heat the Grill on Medium Heat, and rub Oil on the grates. Combine Oregano, Sesame Seeds, Cumin, and Red Pepper Flakes in a small bowl, mix well, and set aside.
  • Use 2 parallel skewers and thread Salmon and folded Lemon Slices beginning and ending with salmon. You should yield 7 or 8 completed skewers.
  • Lightly coat the salmon with the Olive Oil Spray, then season with Salt and the reserved spice mixture.
  • Grill the Salmon Kabobs, turning occasionally, until fish is opaque throughout, about 8-10 minutes.

Lemon Asparagus Couscous Salad with Tomatoes Printable Recipe

Ingredients

  • 1-Box – Israeli Couscous (whole wheat pearl couscous)
  • 1-Bundle – Thin Asparagus Spears (reserve water from boiling)
  • 1-1/2  Cups – Tomatoes, chopped
  • 1/4 Cup – Red Onion, finely chopped
  • 1-1/2 – Lemons, juiced
  • 1 Tbs. – Extra Virgin Olive Oil
  • 2 Tbs. – Fresh Italian Parsley, chopped
  • Coarse Sea Salt, to taste
  • Fresh Cracked Pepper, to taste
  • Slivered Almonds, optional
Salad Prep

Directions

  • Bring a large pot of water to a boil.
  • Rinse Asparagus. Snap bottoms off to remove tough ends (If you bend the asparagus they will snap in the appropriate place).
  • Place asparagus into the boiling water and cook for 3 minutes. Remove with a large slotted spoon and rinse in a colander with cold water to stop cooking.
  • Turn off burner and replace lid to the asparagus water. Reserve for later.
  • Cut asparagus into 1/2 inch pieces.
  • Chop Tomatoes (I used our homegrown regular sized tomatoes, but you could use grape or pearl tomatoes), Red Onion, and Italian Parsley.
  • Place all chopped vegetables and herbs into a large bowl.
Couscous

Directions

  • Bring Asparagus Water back to a boil.
  • In a skillet, add the Olive Oil and the Couscous (my box had about 1-1/2 Cups of couscous). Toast the couscous until lightly golden.
  • Follow the directions on your couscous box for how much Boiling Water to use. the asparagus water will add extra flavor.
  • Bring couscous to a boil.
  • Reduce heat to a simmer, and cover couscous.
  • Simmer for about 10-12 minutes or until couscous has soaked up all of the water. If it sticks to the pan a little, you can add a tiny bit more of the asparagus water to loosen the couscous from the pan.
  • Add the couscous to the other salad ingredients in the bowl, Salt and Pepper to taste.

Serving Suggestions

  • Serve the Salmon Kabobs hot off the grill.
  • The Lemon Asparagus Couscous Salad with Tomatoes can be served directly after making, at room temperature, or chilled.
  • We rounded out the meal with fresh sliced Avocado.
  • Leftover salmon can be added to the couscous salad for a delicious lunch the next day. Warm the salmon or use it cold.
