Sweet Potato and Turkey Meatball Recipe

Not Your Usual Meatball

 

Oh, yum! You will absolutely love these scrumptious sweet potato and ground turkey meatballs. They are perfect for appetizers, pasta, meatball sandwiches, or just on their own.

This recipe is super easy to make with just a few ingredients. You can even make a larger batch and freeze them. Quick and easy for those busy nights.

Sweet Potato and Turkey Meatball Recipe

Ingredients:

  • 1 – Large Sweet Potato
  • 1 lb. – Ground Turkey
  • 1/4  Cup – Breadcrumbs
  • 1 Egg
  • 1/8 teaspoon – Garlic Powder
  • 1/4 teaspoon – Salt
  • 1/4 teaspoon – Pepper
  • Olive Oil

Directions:

  1. Wrap the raw Sweet Potato in a couple of wet paper towels. Place in a dish with a little bit of water. Microwave for 8 to 10 minutes, until sweet potato is tender.
  2. Peel the sweet potato and mash.
  3. Mix the mashed sweet potato, Ground Turkey, Egg, Breadcrumbs, Garlic Powder, Salt, and Pepper until fully incorporated.
  4. Roll small amounts of the mixture in your hands to form meatballs.
  5. Heat a skillet with Olive Oil over medium heat.
  6. When the pan is hot, place a few meatballs in the skillet to brown. Do Not overcrowd the meatballs so you have room to turn and roll for browning on all sides.
  7. Once browned, remove from skillet and place in a microwave-safe or oven-safe dish to finish cooking in your desired appliance.
  8. If finishing the cooking by microwave, cook on high for 3 to 5 minutes, or until done.
  9. If by the oven, place the meatballs in a 400-degree oven for 8 to 10 minutes, or until cooked through.

Ingredients:

  • 2 Cups – Broccoli Florets
  • 1 Cup – Dried Cranberries
  • 1/2 Cup – Feta Cheese Crumbles
  • 1/2 Cup – Candied Pecans
  • Poppyseed Dressing

Directions:

  1. Chop Broccoli Florets so they are bite-sized.
  2. Give the Candied Pecans a coarse chop.
  3. In a large bowl, add broccoli, pecans, Cranberries, and Feta Cheese.
  4. Mix lightly.
  5. Drizzle with Poppyseed Dressing and toss to coat the salad.
  6. It is ready to serve!

Avocado Eggs Florentine Toast Recipe

 

Ingredients:

  • 1 – Avocado
  • 1 – Handful Fresh Spinach Leaves
  • 1/4 – Shallot
  • 1 – Roma Tomato
  • 4 – Eggs
  • Cracked Wheat Sourdough Bread
  • Salt
  • Pepper
  • Cooking Oil

Directions:

  1. Once you start cooking, things move very quickly, so have everything prepped and ready to go.
  2. Slice the Roma Tomato and Shallot, set aside.
  3. Chiffonade the Spinach, set aside.
  4. Separate 3 Egg Whites, add 1 Whole Egg (or you could use whole eggs), lightly beat. Set aside.

  6. Lightly spray skillet with Cooking Oil, heat skillet.
  7. Place 2 slices of Cracked Wheat Sourdough Bread (or your bread of choice) in the toaster to toast while you are cooking.

  9. Add Eggs to the pan and scramble soft, about 2 minutes.

A Quick and Easy 15-Minute Recipe

 

A chayote squash has a pear-like shape feature and is pale lime green in color.

Chayote squash is uniquely known for its pear-like shape and pale lime green color. Because almost every part of the chayote squash is edible, it’s a very useful fruit in culinary. From its fruit to its tendril and flowers and even its roots, they are all edible. Its core has small seeds and are also edible but usually discarded. Its taste is merely dull allowing it to be a carrier sponge for other ingredients’ flavor.

 

Some chayote leaves that are fresh can also be eaten.

Although the chayote squash is dull in taste, it has some nutritional values such as vitamin C, vitamin B6, and folate. It also has dietary fiber, which is very high in potassium and very low in sodium. This combination is ideal for maintaining a healthy blood pressure. Chayote squash is also used for medicinal purposes such as the treatment of vascular diseases and kidney stones. Because of the nutritional values, chayote squash can give, other countries have conducted a research on chayote squash as part of an alternative feeding in some countries such as Mexico. There have been studies about other nutritional values of a chayote squash.

 

Chayote squash patty is a cheaper alternative for expensive vegan burgers.

 

Growing a Chayote Squash

The chayote squash is available all throughout the year. Fall is the peak season for harvest. If you plan to grow a chayote squash in your yard, you may start planting the whole fruit 3 to 4 weeks after the last average frost date in spring. You may do this when the weather has warmed. It is best to grow a chayote squash in summer when the weather varies from very warm to hot. It is best to plant it in tropical or subtropical regions. Chayote squash may require 120 to 150 frost-free days before you can harvest them.

When watering chayote squash, just give it even, regular water and make sure that you don’t let the soil dry out. Adding aged compost to the planting bed before planting the chayote squash may also help grow healthy plants. Although gardening may seem easy to do, the process is a little bit tricky. With this, you might need several tools and gadget to achieve a healthy garden successfully. One of these tools is the digital PH meters to test the acidity of the soil or water that you use in your garden

 

You can also make vegetable fritters from chayote squash.

Different Applications with Chayote Squash

There are a lot of ways on how to cook chayote squash. It may be eaten raw or cooked. If a chayote squash is not yet matured or is young, you may slice or shred it in salads. You may also serve it with other ingredients like cabbage, citrus, and fresh herbs for a healthier dish. It may also be pickled and preserved. Others way to serve chayote squash is a grill, stir-fry, boil, steam, and bake.

Moreover, a ripe chayote squash can be boiled, mashed, roasted, and served just like how you serve potatoes. You can also peel and slice the chayote squash and add it to soups, stews, curries, and casseroles. However, in this section, we will share how to make a patty from chayote squash. Patty is a favorite kid’s choice of food. This recipe is indeed a creative way to incorporate vegetables into your child’s favorite dish.

How To Make a Patty From Chayote Squash

Do you want to know how to make a patty from a chayote squash? Here’s an easy and fun recipe for you to try! To start with, you will need the following.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • ½ pound Portobello mushrooms (coarsely chopped)
  • ½ tablespoon fresh ginger root (finely chopped)
  • 1 cup corn kernels, fresh or canned (drained)
  • 1 cup chayote squash (peeled and cubed)
  • ½ chopped almonds (toasted)
  • 1 cup brown rice
  • ¼ cup black beans (cooked)
  • 1 ½ cups cornflake crumbs
  • 2 large eggs (beaten)
  • Salt (to taste)
  • Ground pepper (to taste)

Chayote is packed with nutrients that are good for the body.

How to cook it:

  1. Put olive oil in a large sauté pan and wait until it becomes hot.
  2. Add the onion and stir to coat it with oil.
  3. Sauté the onion with medium heat fire for 4 to 5 minutes until softened.
  4. Add the mushrooms and cook over high heat until it becomes brownish in color and the juice is released from the mushrooms.
  5. Lower the heat to medium fire and add ginger root, corn, chayote squash and sauté them for 4 minutes.
  6. Add the vegetable mixture and the rest of the ingredients into a food processor. Pulse until the mixture looks like chopped meat.
  7. Form the mixture into patties and place them on a grill until the color turns brown. You may also place them under a broiler.
  8. Serve with grilled onions and tomatoes.

Canned tuna is a favorite of many people around the world. When I was in college, I remember regularly buying canned tuna because it has many uses. It can serve as a snack, a standalone dish, and as a sandwich spread.

Do you want a tuna dish that’s different? Then check out this fried tuna pancakes recipe. It is a nutritious dish that you can prepare and cook in less than an hour. And it’s so delicious that your kids will love it, too.

Is canned tuna safe to consume?

Before we get into the recipe, I would like to focus first on canned tuna. Is it safe to consume? Or should you just opt for fresh tuna?

I mentioned this because there are some people who believe that canned tuna contains mercury which can harm the nervous system and other parts of the body. Mercury occurs in the environment particularly the oceans, and fishes like tuna can absorb it.

The good news is that canned tuna is very healthy and safe to consume because it doesn’t have mercury. And according to dietitians, fresh tuna steak is more likely to have mercury than canned tuna as the latter is made with younger fish.

Experts also agree that consuming a can of tuna every week is alright, even if you are pregnant.

What are the health benefits of canned tuna?

Canned tuna is also packed with many nutrients that can do a lot of wonders to your body. It contains omega-3 fatty acids that promote good brain function. This is an essential fatty acid that has also been shown effective in reducing inflammation in the body as well as lower risks of heart disease and cancer.

Canned tuna also has high levels of niacin, a B-vitamin that helps keep the digestive system healthy. Niacin can also keep the skin glowing and our nerves well-functioning. In fact, a three-ounce serving of canned tuna has about 11 milligrams of niacin.

Another good seafood source of niacin is canned oysters.

Finally, canned tuna has a good amount of vitamin B 12 that supports normal brain function and aids in red blood cell production.

How to buy canned tuna

While canned tuna is safe and healthy to eat, this doesn’t mean that you should just get and buy any canned tuna you see on the grocery shelves.

There are plenty of tuna species, but the best one is skipjack or light tuna. Fortunately for all of us, this is also the most commonly found in tuna cans on grocery store shelves. There’s just one problem with this tuna—it has a light gray color that is slightly unappealing to most people. But if you could not care less about the color, then I suggest you go for a canned tuna using this tuna type.

I also recommend that you shop for those canned tuna products caught by troll or pole-and-line. This is considered as the most environment-friendly and sustainable option. As such, canned tuna with labels such as “school caught” are the ones you should be getting.

You should also think twice about getting flavored tunas since these have excessive amounts of sugar and salt.

 

Fried Tuna Pancakes with Potato, Onion, and Garlic Recipe

This recipe takes about 20 minutes of preparation and 30 minutes of cooking time. It yields four servings.

Ingredients:

  • One large potato, peeled and cubed
  • Four cans of tuna, drained
  • One egg
  • 1/4 cup of chopped onion
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of dry breadcrumbs
  • 1 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of Italian seasoning
  • 1/4 teaspoon of cayenne pepper
  • 1 teaspoon of Italian seasoning
  • Salt and black pepper to taste

Step by step guide:

  1. Place the cubed potato in a small pot. Add salted water and cover it. Bring this to a boil before reducing the heat to medium low. Simmer until tender, or for around 20 minutes.
  2. Drain and let the steam dry for 1-2 minutes. Mash the potato using a fork in a bowl.
  3. Combine the tuna, onion, egg, Dijon mustard, garlic powder, Italian seasoning, bread crumbs cayenne pepper, salt, and pepper into the potato.

Tip 1: If there is no Dijon mustard in your pantry, you can totally use these mustard substitutes like wasabi, honey mustard, etc.

  1. Divide this into eight equal portions. Shape them into patties.
  2. Heat the olive oil in a skillet placed over medium heat. Fry the patties for about 3 minutes per side, or until they turn brown and crispy.

Tip 2: Pour enough olive oil to coat the skillet so that the patties won’t easily break apart.

A Satisfying Comfort Food

Life is hectic. I long for the days when the kids were little and didn’t have crazy schedules. Alas, those days are gone. Now, I have to contend with dance classes and various doctors’ appointments. Oh, and add to that all of their social engagements. Yesterday was one of those days. Crazy, crazy, crazy! So, when it came time for dinner, I had two options: take-out or make it simple.

As always, I chose the make it myself simple route. I hate paying a small fortune for food that I could easily make myself. Since time was short, I decided on a Simple Mac and Cheese dish. Shells and cheese actually, but let’s not split hairs.

For those busy nights, I also like to keep bags of frozen veggies in the freezer. You know, the ones that you can microwave right in the bag. If you want to add some meat to it, you can throw in some cooked bacon (and jalapenos) or some already grilled chicken. I believe you can find that in the produce section of most supermarkets.

Gather all of your ingredients. I like to have mine measured out and ready since we’re making a roux and things happen so quick. Once you have boiled your pasta, drain it in a colander and set aside. Use the same pot you used to boil the pasta, to make the sauce. (One pot, less cleaning!)

Get your pot nice and hot, and then add the butter. Once it is melted, add the flour and whisk, whisk, whisk! Once the butter and flour are completely combined, add milk and whisk until thickened.

I was recently teaching my daughter how to make a roux. She complained that it wasn’t getting thick. I told her that that is how it works. It’s thin, it’s thin, and then bam! Thick!

Now that your sauce has reached the desired thickness, add the cheese. For my mac and cheese, I add: cheddar, mozzarella, and a wild card. It really depends on what I feel like that day or what I have on hand. Stir until completely melted.

When your cheesy sauce is ready, add the pasta back into the pot and stir. I keep my heat on low during this step to make sure everything gets warmed back up.

Serve and Enjoy!

Ingredients:

  • 16 oz pasta (macaroni, shells, penne…whatever)
  • 6 tbps flour6 tbsp butter (not margarine)
  • 2 cups whole milk
  • 3 cups of cheese (you can use 3 cups of the same or mix it up and use three different)
  • Salt and pepper to taste.

How to:

  1. Cook Pasta according to the instructions on the box. Drain and set aside.
  2. In a large pot, melt butter. Once melted, add flour and whisk until completely combined.
  3. Add milk and whisk until it reaches desired thickness.
  4. Add cheese to pot and stir until melted.
  5. Add pasta to pot and stir until combined.
  6. Serve hot and enjoy.

Hello, my friends! Let me start this little post by telling you how this Polska Kielbasa and Caramelized Onions Recipe idea came about…

The other day, I found myself feeling a little nostalgic, and memories of my Oma and her wonderful cooking and baking came to mind. Oma is the German word for grandmother, and since my mother’s parents moved to the United States in the 1920s from Bavaria, that is what we called her. There’s a lovely little story about my Oma coming to America on a boat escorted by nuns to marry my Opa, but that will have to wait for another time.

My thoughts traveled through Oma’s German pancakes, nut rolls, and Schwetchken Küchen (plum tart), to her beef roast and homemade noodles, and Würst Salat (ring bologna and onion salad). My memories were so vivid; I could almost smell the yummy aromas. Now, I was hungry for some of Oma’s tasty dishes. With the crisp autumn weather, I wanted something hot, but my schedule demanded something quick and easy. So, that’s when one of Oma’s go-to ingredients came to mind—Hillshire Farm® Polska Kielbasa–it is perfect for Fall recipes.

After I picked up Rory from the library, we stopped at our local Walmart to grab the Polska Kielbasa, onion, steak rolls, and sauerkraut.

 

I was definitely in a German mood. So, why not celebrate my Bavarian heritage and all its grand traditions and Oktoberfest festivities? I pulled out a few of my Bavarian items to add to the fun.

 

Then, I got to work on dinner. I am telling you, if you want something mouthwateringly delicious to set on your table in about 20 minutes, this is it! This recipe is easy-peasy and ideal for an Oktoberfest gathering or anytime.

Here’s What You Need:

  • Hillshire Farm® Polska Kielbasa
  • 1 Large Onion
  • Fresh Dill (chopped)
  • Salt (to taste)
  • 1-2 Tablespoons Olive Oil
  • 1/4 – 1/2-cup water (if needed)
  • Steak Rolls
  • German Mustard (optional as condiment)

 

Directions:

  1. Place a Skillet with 1-2 Tbs. Olive Oil over burner to warm
  1. Slice Onion
  1. Place onion in skillet to start getting tender
  1. Add Salt to taste
  1. Open Polska Kielbasa (using the “Easy Open” feature on the packaging) and place in skillet on top of onions
  1. Add a little water if needed to keep onions from sticking to skillet.
  1. Let cook until onions are tender and slightly caramelized and Polska Kielbasa is cooked through.
  1. Shortly before you are ready to pull the Polska Kielbasa and Caramelized Onions from the pan, add some fresh chopped Dill to the skillet, stir in well.

 

To Serve This Dish:

 

  • Slice the Polska Kielbasa
  • Mix Polska Kielbasa and Caramelized Onions in a bowl
  • Serve as is for a Warm Salad, or Serve on a Steak Roll as a Sandwich Roll


Add some sauerkraut or potato salad and perhaps a favorite German beverage, and you have a meal your taste buds will be craving! Turn on some German music, and maybe even do a little Chicken Dance to celebrate. #OktoberOnTheFarm

Halloween Night Chili Recipe Perfect For Trick-or-Treaters

Here’s a fangtastic and fun chili idea for your Halloween Night dinner, plus a bonus spice mix recipe, from our Regular Contributor, Deborah!

There is no night, other than Christmas Eve, that children anticipate more than Halloween. Energy levels are high, bordering on manic, and all they want to do is get their costumes on and get to Trick-Or-Treating. However, as parents it’s our job to make sure they get at least a little dinner to balance out all of the sugary treats they are about to indulge. So, the criteria for dinner is as follows: quick and easy (who wants to slave over a hot stove AND put zombie makeup on a kid), and it must be fun enough to grab a child’s attention. Since I know the kids are going to be too wild to eat much, I want to make sure they are getting something that is packed with protein and will stick to their ribs. That leaves me with one option…

We’re lucky this year, because Halloween is on a Saturday. This will give us some extra time to get everything in order. To make this basic chili recipe more fun, I’ve decided to add it to bags of corn chips, like a walking taco, or as I like to call them, Nachos to Go. You can read more about those here. My kids absolutely love eating food out of chips bags. I think because it feels slightly naughty.

Before we moved to California, I was the coordinator of children’s ministry at a church in my hometown. Every year we would host a “Trunk or Treat.” I really wish I would have thought of Halloween Night Chili sooner, so I could have served this to my volunteers (95% of the time it was freezing cold on Halloween).

Ingredients:

1 lb lean ground beef, browned.
2 cans of Chili beans with sauce
1 can of Black beans, drained and rinsed
1 can of corn, drained
1 can of diced tomatoes and chilies
1 packet of chili seasoning (Or make your own. See directions below)
Sour Cream (Optional)
Shredded cheese (optional)
Diced onions (optional)

How to:

In a medium sized stock pot, brown ground beef with the chili seasoning. Open cans. Add chili beans and diced tomatoes to pot. Drain and rinse black beans, add to pot. Drain corn and add to pot. You can rinse the corn if you’d would like. This will help cut down on sodium. Bring to a boil. Reduce heat and simmer for 30 minutes.

Let cool for a bit before you add to chip bags. When cooled to desired temp, add a small ladle full to chips of your choice. Corn chips or nacho flavored tortilla chips would work perfectly. Top with desired ingredients and serve. For your youngest children, you may want to serve it in a bowl to keep their little hands from burning. This will also help them from spilling the contents of their bag.

  • 1 can of diced tomatoes and chilies
  • 1 packet of chili seasoning (Or make your own. See directions below)
  • Sour Cream (Optional)
  • Shredded cheese (optional)
  • Diced onions (optional)
Directions:
  1. In a medium sized stock pot, brown ground beef with the chili seasoning.
  2. Open cans.
  3. Add chili beans and diced tomatoes to pot.
  4. Drain and rinse black beans, add to pot.
  5. Drain corn and add to pot.
  6. You can rinse the corn if you’d would like. This will help cut down on sodium.
  7. Bring to a boil.
  8. Reduce heat and simmer for 30 minutes.
  9. Let cool for a bit before you add to chip bags.
  10. When cooled to desired temp, add a small ladle full to chips of your choice. Corn chips or nacho flavored tortilla chips would work perfectly.
  11. Top with desired ingredients and serve. For your youngest children, you may want to serve it in a bowl to keep their little hands from burning. This will also help them from spilling the contents of their bag.

Since I am so sensitive to sodium and MSG, I usually make my own spice mixes. For me, cooking is not an exact science. I’m a southern girl. I cook using measurements like: dash, smidge, pinch, etc. A few years ago for Christmas, my momma gave me some really funny, but very useful measuring spoons (pictured above). They say, “dash”, “smidge”, and “pinch”. Now I can actually write down my recipes with a little more precision!

Make your own Chili Seasoning:

In a small bowl, mix together the following ingredients:
1 tsp cumin
½ tsp chili powder
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika
¼ tsp oregano
¼ tsp cinnamon
¼ tsp salt
¼ tsp ground black pepper
1/8 tsp ground red pepper
Adjust each amount, if desired, to fit your taste buds. That’s another advantage of making your own spice mixes.
