Ahoy, me hearties, it be me, th’ bloody laggard Barnacle Bill. Now, don’ skuttle me skippers, I be here to apologize fer makin’ th’ wench Lorelai miss Speak Like a Pirate Day. It be a jolly day indeed, ‘n quite a shame to have not be marked wit’ a fine blog message. But, just so ye be knowin’, t’was all me fault tha’ Lorelai was no’ available to scribe th’ scurvy pirate message. If ye spy wit’ ye eye, ye know I had her chained. Tha’ be right, me, Barnacle Bill, had th’ wench Lorelai chained in th’ galley ’til she came up wit’ an even more spectacular recipe fer me beloved Pumpkin Spice Syrup.

Alas, ye loyal readers be knowin’ tha’ she wrote ’bout Homemade Pumpkin Spice Syrup already before. ‘N as I sailed through Lorelai Lagoon last Autumn, I picked up some ‘o th’ tasty treat. Th’ syrup was delectable, like a fair breeze in a ship’s sail, but th’ tiny bits ‘o grit t’wer a sword in me throat. So, I told her she would walk th’ plank unless she agreed to create a New Improved Pumpkin Spice Syrup. ‘o course she agreed, how could she no’ wit’ me swashbucklin’ ways ‘n rugged looks. So chain her I did, ‘n ye gunna be thankful, savvy?

Lorelai set to cookin’ by gatherin’ th’ in’redients:

Water, Sugar, Cinnamon, Cloves, Pumpkin, Ginger, Nutmeg, Vanilla

Dissolve Sugar in Water wit’ Cinnamon ‘n Cloves

Add Pumpkin, Ginger, ‘n Nutmeg. Whisk ‘n Simmer.

Strain through cheesecloth ‘n add Vanilla.

Th’ lass hardly gave no mind nor bother to th’ cannon ball ‘n chain. I t’was blown off me pegleg by how simple a task it wer to make th’ coveted syrup.

Ye must give one ‘o me favorite Fall breakfasts a go, cackle-fruit wit’ a side ‘o steamin’ buttered biscuits drizzled wit’ Pumpkin Spice Syrup. It be to die fer (at least them squawkin’ chickens be worthy fer somethin’). ‘N an Autumn day don’ go by tha’ I don’ stir some sweet syrup in me coffee ‘n ‘o course me rum. Oh, th’ heavenly grog! But I reckon th’ possibilities fer its uses be endless.

I wan’ed to charge a pair gold doubloon fer th’ New Improved Recipe, but th’ lady Lorelai was a bit o’ a spiky sea urchin, insistin’ it be free to all ye scabby landlubbers.

Ye can even print it fer safekeepin’; mark it wit’ an X–just like scurvy pirate gold it be so prized.

Hoist th’ recipe: Pumpkin Spice Syrup

Pumpkin Spice Syrup: Add to coffee, hot chocolate, pancakes, drizzle over Bundt cakes, coffee cakes, ice cream, and more...

Type: Syrups / Sauces /Marinades
Serves: 12 servings
Ingredients:
  • 1-1/2 cups Water
  • 1-1/4 cups Sugar (granulated)
  • 3-5 Cinnamon Sticks
  • 8-10 Whole Cloves
  • 1/3 cup Pumpkin Puree (generous serving)
  • 1/2 tsp. ground Ginger
  • 1 tsp. ground Nutmeg
  • 1 tsp. Vanilla Extract
Directions:
  1. In a medium saucepan, add Water, Sugar, Cinnamon Sticks, and Cloves. Simmer over medium-low heat until the sugar dissolves completely, about 4 minutes.
  2. Turn the heat down to low, and whisk in Pumpkin Puree, Ginger, and Nutmeg. Simmer for 8-10 minutes, Stirring occasionally. DO NOT allow mixture to boil.
  3. Remove from heat, and Strain through a fine mesh strainer lined with a double layer of cheesecloth.
  4. Stir in Vanilla Extract.
  5. Allow syrup to Cool to room-temperature before refrigerating.
  6. Shake or Stir before serving.
Notes
Store in a Mason Jar or airtight container.
Syrup will last for 1-month in the refrigerator.

*** Break Cinnamon Sticks to release more flavor. I rinse well and re-use my Cinnamon Sticks for the next batch of syrup.

Recipe is easily doubled and tripled. Makes a great gift!

raise th’ Jolly Roger!

Aye, me hearties, it be officially Speak Like A Scurvy Pirate Day.

Way back in th’ beginnin’ ‘o ’tis blog, I did a message all in scurvy pirate shout, ‘n me thoughts were ‘o makin’ it a recurrin’ theme on Life wit’ Lorelai. All ye pirates seemed to have such a jolly ruckas wit’ Yo-Ho, Yo-Ho, A Treasure Find Fer Me.

So, here me be on ’tis grand day, brin’in’ ye another message from th’ salty sea.

It had be a long summer at sea without th’ comforts ‘o a wee sand in me boots ‘n some meat in me belly, when me ship finally sailed into Lorelai Lagoon to set anchor. Th’ pier swayed wit’ th’ tide, ‘n creaked ‘n groaned as we disembarked.

Yarr, t’was a warm summer evenin’ wit’ just th’ hint ‘o an autumn crispiness in th’ air as th’ sun set in all its glory. Me belly was a rumblin’ fer anythin’ that did no’ crawl out ‘o th’ bunghole. I scurried me way to Lucky Luke’s to scarper me some grub ‘n a bottle ‘o spiced rum.

Th’ barmaid was a beauty to be sure, ‘n offered me a late summer – early fall grub from over th’ fire. Pullin’ her atop me knee, I drew close to her ear, and told her as long as it did no’ come from th’ sea, it would be fine wit’ me. Th’ wench jumped up ‘n swished her skirts as she quickly went behind th’ bar fer me bottle.

After I swallowed down a couple ‘o snorts ‘o spiced rum, th’ barmaid came wit’ me skilly and duff. Th’ sight ‘n smells were beyond me imaginin’s–an onion seasoned chicken, baby red potatoes, ‘n apples grilled over th’ fire. She hoisted a tray full ‘o crusty bread ‘n fresh butter, tomatoes ‘n cucumbers from th’ garden out back. T’was times like these that gave me twisted thoughts ‘o bein’ a land lubber.

Bein’ th’ barnacle-covered scurvy pirate that me be, I managed to secret away wit’ a recipe. Now, I do no’ want to be known as selfish or greedy, so I gunna share it wit’ ye. ‘O course, if a few gold doubloons happen to fall into me pockets, well, who would I be to object to such a kind gift?

Onion Seasoned Grilled Chicken

Ingredients:

1-packet Onion Dip Mix

4-6 Boneless Skinless Chicken Breasts

Directions:

Rub cleaned Chicken with the Onion Dip Mix. Place in a ziplock bag and refrigerate at least 1-hour before using. Let chicken warm to almost room temperature before placing on the grill.

‘Tis makes fer a tasty treat indeed, when ye have be out at sea fer so long. I woe ye find it to ye likin’, me bucko.

‘N b’fore I be off, lift high ye glass matey in a toast to me ‘n thee.

“Here’s to ourselves, ‘n hold ye luff, plenty ‘o prizes ‘n plenty ‘o duff.” ~ A fair fine drinkin’ toast as recorded in Treasure Island by Robert Louis Stevenson.

Yo-Ho, Yo-Ho, A Treasure Find Fer Me

Livin’ in th’ ship I grew up in be a blessin’ ‘n a curse. Sure, I be surrounded by all th’ wonderful memories ‘o me childhood, but I mean, literally, I be surrounded! When th’ indoor plumbin’ on the upper deck flooded 5-days before Christmas, causin’ massive waterfalls in me livin’ room ‘n dinin’ room, it too was a blessin’ ‘n a curse.

Th’ jolly news be that th’ middle core ‘o me ship (upstairs ‘n below) be now beautiful, up-to-date, spit shine, ‘n un-cluttered! However, that leaves a lot ‘o th’ rest ‘o th’ ship stuffed to th’ gills wit’ 42-years ‘n 4-generations ‘o barnacle-covered crud. So, I systematically tackle a small section at th’ hour tryin’ to re-claim th’ ship from th’ ghosts ‘o clutter past ‘n present.

One day last week, I decided to spit shine out me salty sea-dog ‘o a father’s medicine cabinet in th’ master cabin. (me salty sea-monster ‘o a dad has be livin’ in Mississippi now since th’ new millenium. Aye, it be a long time, but he has not allowed me to change anythin’…arrgh! Since he gunna be 85-years ’tis comin’ SeptembARrrrr, I figure I would change away—he may never travel the seas home again to be knowin’). I put on some latex gloves ‘n pulled out cologne bottles smellin’ o’ seaweed and salt, expired remedies from th’ alchemist, razors, tweezers, toothpicks, a timepiece, some silver dollars, a crusty wallet stuffed wit’ ancient photos, ‘n th’ like. On th’ top shelf, below th’ wrapper from a used up potions box, I found me treasure.

Now, I be sure ye thought tha’ th’ wallet ‘o barnacle-covered photos was a right fair find ‘n it was, but I had seen all ‘o them photos before. Th’ treasure I found was a fine photograph ‘o me mother tha’ must have be taken in th’ late 50’s to extra early 60’s.

Th’ lovely lass, be known as me mother.

I had never laid eyes on ’tis photograph before. It was excitin’! I called fer Rory to come have a look, ‘n I cannot wait to spy wit’ me eye me uncle (me mom’s brother) again to show him th’ photo ‘n maybe find out whar it was taken ‘n when.

So e’en when thin’s look glum and ye be swabbin’ th’ deck, blessin’s can be found in th’ most obscure places ‘n durin’ th’ most menial ‘o tasks. Aye mateys, a find well treasured.
