Sweet Potato and Turkey Meatball Recipe

Not Your Usual Meatball

 

Oh, yum! You will absolutely love these scrumptious sweet potato and ground turkey meatballs. They are perfect for appetizers, pasta, meatball sandwiches, or just on their own.

This recipe is super easy to make with just a few ingredients. You can even make a larger batch and freeze them. Quick and easy for those busy nights.

Sweet Potato and Turkey Meatball Recipe

Ingredients:

  • 1 – Large Sweet Potato
  • 1 lb. – Ground Turkey
  • 1/4  Cup – Breadcrumbs
  • 1 Egg
  • 1/8 teaspoon – Garlic Powder
  • 1/4 teaspoon – Salt
  • 1/4 teaspoon – Pepper
  • Olive Oil

Directions:

  1. Wrap the raw Sweet Potato in a couple of wet paper towels. Place in a dish with a little bit of water. Microwave for 8 to 10 minutes, until sweet potato is tender.
  2. Peel the sweet potato and mash.
  3. Mix the mashed sweet potato, Ground Turkey, Egg, Breadcrumbs, Garlic Powder, Salt, and Pepper until fully incorporated.
  4. Roll small amounts of the mixture in your hands to form meatballs.
  5. Heat a skillet with Olive Oil over medium heat.
  6. When the pan is hot, place a few meatballs in the skillet to brown. Do Not overcrowd the meatballs so you have room to turn and roll for browning on all sides.
  7. Once browned, remove from skillet and place in a microwave-safe or oven-safe dish to finish cooking in your desired appliance.
  8. If finishing the cooking by microwave, cook on high for 3 to 5 minutes, or until done.
  9. If by the oven, place the meatballs in a 400-degree oven for 8 to 10 minutes, or until cooked through.

So, here we are, back to school and heading quickly for the holiday season. And what does that mean? Extremely busy schedules, life on the run, and the need for quick and easy pick-me-ups that provide more energy and alertness. That is where this fantastic recipe and Gold Peak® Tea Lattes & Coffee come into play.

You’ve heard it before, breakfast is the most important meal of the day. But, still, you need lunch, dinner, and maybe even a snack. This delicious recipe is perfect for any time of the day. Avocado Eggs Florentine Toast is packed with protein and nutrients that make it a smart choice to help boost your energy.

 

Avocado Eggs Florentine Toast Recipe

 

Ingredients:

  • 1 – Avocado
  • 1 – Handful Fresh Spinach Leaves
  • 1/4 – Shallot
  • 1 – Roma Tomato
  • 4 – Eggs
  • Cracked Wheat Sourdough Bread
  • Salt
  • Pepper
  • Cooking Oil

Directions:

  1. Once you start cooking, things move very quickly, so have everything prepped and ready to go.
  2. Slice the Roma Tomato and Shallot, set aside.
  3. Chiffonade the Spinach, set aside.
  4. Separate 3 Egg Whites, add 1 Whole Egg (or you could use whole eggs), lightly beat. Set aside.
  5. Mash Avocado with a fork, set aside. (see my Avocado Tips & Tricks)
  6. Lightly spray skillet with Cooking Oil, heat skillet.
  7. Place 2 slices of Cracked Wheat Sourdough Bread (or your bread of choice) in the toaster to toast while you are cooking.
  8. Saute Shallots, then add Spinach, until wilted.
  9. Add Eggs to the pan and scramble soft, about 2 minutes.

Grilling is something we can do nearly year round in Southern California, and we love to do it. Another thing our family loves is quick and easy meals that are packed with delicious flavors. These Grilled Barbecue Ranch Chicken Tacos with Ranch Sour Cream Sauce do not disappoint!

This recipe features fresh and tasty ingredients that are easy to work with and quick to cook. We served our tacos with grilled corn-on-the-cob and a colorful variety of bell peppers. Yum! A tasty, delicious, and healthy meal option for a busy night or anytime.

 

Grilled Barbecue Ranch Chicken Tacos Recipe with Ranch Sour Cream Sauce

Ingredients:

  • Chicken Breasts (boneless, skinless)
  • Tomatoes
  • Cheese (shredded)
  • Fresh Cilantro
  • Sour Cream
  • Ranch Dressing
  • Barbecue Sauce
  • Fresh Lime (optional)
  • Tortillas (I used Flour Tortillas)

Directions:

  1. Marinate Chicken Breasts in Barbecue Sauce for 6 hours to overnight
  2. Dice Tomatoes
  3. Shred Cheese
  4. Chop Fresh Cilantro
  5. Make the Ranch Sour Cream Sauce: Mix Sour Cream and Ranch Dressing to taste
  6. Grill chicken breasts
  7. Let chicken breasts rest a few minutes, then slice chicken into thin strips
  8. Warm Tortillas on a griddle or in the microwave
  9. Optional – cut Fresh Lime into wedges
  10. Load warmed tortillas with grilled chicken, tomatoes, and cheese
  11. Top with the Ranch Sour Cream Sauce and cilantro

I have to admit, a good bacon, lettuce, and tomato sandwich is one of my all-time favorites. There is just something sublime about the melding of those savory and fresh ingredients. It is an easy sandwich that everyone knows how to make…or do they?

We have had a big laugh a couple of times within the last six weeks or so while dining at two different restaurants. I ordered the BLT sandwich, and both times my sandwich was served without tomato. What’s that? Bacon, lettuce, and TOAST??? Both waitresses were as shocked as we were, and the laughter just rolled.

Needless to say, BLTs have been on my radar, so I thought it would be fun to do a round-up of bacon, lettuce, and tomato inspired recipes. I’ve scoured the web and pulled together some amazing BLT recipe ideas that will make your mouth water. Plus, these varied twists on the classic can be served for breakfast, brunch, lunch, appetizers, dinner, you name it — they are delicious anytime, anywhere. And, take note, they all include tomato! Do you love the holidays? If you are anything like me, you do. And I so enjoy hosting fabulous celebrations with family and friends. But, this busy time of year can be a little stressful. One way to slow down the hectic go, go, go, is with a relaxing date night for you and your honey. So, I am going to show you how to have a romantic dinner for two with Barilla pasta and Clos du Bois wines.

Date Night – A Romantic Holiday Dinner

Starts with Barilla & Clos du Bois

The holidays take us in all sorts of directions. Between cleaning, decorating, shopping. planning and scheduling festivities, and everyday life, there is no busier time of year. But, dinner must happen and making time to share the joys of the season with your special someone is something that should happen.

Luke and I have been crazily trying to finish a few home projects before our big Thanksgiving feast with family. So, when we had the opportunity to have a special evening together, we took advantage, and pasta and wine were definitely on the menu.

Pasta and wine find its way to our table year round. It is so versatile and so easy to prepare. It is a perfect way to make any occasion special, and date night is just one. When pasta is on my menu, I reach for the authentic Italian brand I trust, Barilla. It’s high-quality and great taste is simple, wholesome, and the #1 choice of Italy.

Barilla Angel Hair Pasta was on our holiday date night menu along with filet mignon with a mushroom cabernet sauvignon sauce, herbed carrots, and sautéed kale with cranberries and walnuts. Paired with Cos du Bois Cabernet Sauvignon, this was a delectable and romantic dinner for two.

Today, I am sharing my recipes for Heirloom Tomato Angel Hair Pasta and Mushroom Cabernet Sauvignon Sauce. Be sure to watch the blog for the other recipes to come soon. I love cooking with fresh herbs, so you will find plenty in these dishes.

Let’s get to the recipes!

Heirloom Tomato Angel Hair Pasta

Ingredients:

  • Barilla Angel Hair Pasta (amount according to package directions for two)
  • 1 to 1-1/2 Cups – Heirloom Tomatoes (I used mini heirloom tomatoes)
  • 1/4 Cup – Shallot
  • 1 to 2 Cloves – Garlic
  • 2 Tablespoons – Fresh Flat-Leaf Italian Parsley
  • 2 Tablespoons – Fresh Chives
  • 1  Tablespoon – Butter
  • 1/2 Tablespoon – Olive Oil
  • Salt
  • Pepper

Directions:

Bring water to a boil. Chop Heirloom Tomatoes into bite-sized chunks. Finely dice Shallots. Mince Garlic. Tear or chop Flat-Leaf Italian Parsley. Chop Chives. Cook Angel Hair Pasta according to package directions. In a saucepan, sauté Butter, Olive Oil, shallots, and garlic until translucent, add tomatoes. Let tomatoes cook down a bit. Add cooked pasta. Salt and Pepper to taste. Toss pasta with the tomato sauce. Sprinkle with fresh herbs (parsley and chives). Toss to mix well. Serve immediately.

 

Mushroom Cabernet Sauvignon Sauce

Ingredients:

  • 2-3 Tablespoons – Butter
  • 2 Tablespoons – Shallot
  • 2 Cloves – Garlic
  • Mushrooms (I used Crimini Mushrooms)
  • 1/4 Cup – Clos du Bois Cabernet Sauvignon (red wine)
  • 1/4 Cup – Chicken Stock
  • 2 Tablespoons – Fresh Flat-Leaf Italian Parsley
  • 2 Tablespoons – Fresh Chives
  • 1-1/2 Teaspoons – Fresh Tarragon
  • Salt
  • Pepper

Directions:

Dice Shallots. Slice and chop Mushrooms into bite-sized pieces. Mince Garlic. Chop Parsley, Chives, and Tarragon. In a saucepan, sauté Butter, Shallot, and Garlic until translucent. (I used the same pan I cooked my filet mignon in for extra flavor). Add mushrooms (do not over crowd). When the mushrooms are nicely sautéed, pour in the Cabernet Sauvignon and Chicken Stock. Salt and Pepper to taste. Reduce sauce a bit. Add fresh herbs (parsley, chives, tarragon). Spoon over filet mignon or your choice of  meat or pasta.

 

 

The Perfect Pairing

Clos du Bois Cabernet Sauvignon was the perfect pairing for our date night dinner. The elegant, romantic, and fruity wine brings together the best of two worlds — the French way of making wine under the California sun. Clos du Bois wines are well-balanced, intense, and true to varietal character, a premium vintage at an unbelievable value.

For you wine connoisseurs, the medium bodied cabernet sauvignon has a fruit forward with balanced oak character. Flavors of ripe, moderately fleshy blackberry, plum, black cherry, licorice, with rich round tannins, moderate oak spice, balanced acidity, hint of oak, and coffee with supple tannins. The smooth varietal offers up-front fruit that continues through to finish.

In short, this wine pairs beautifully with pasta and meat and is perfect for holiday entertaining of any kind. Clos du Bois Cabernet Sauvignon is a fantastic selection with these recipes.

Tomato & Grilled Bell Pepper Salad

A Tasty Side Dish for Any Meal

 

Tomato and Grilled Bell Pepper Salad is a perfect side dish for a barbecue or any meal. It’s quick, easy, and tasty, tasty, tasty! Of course, this salad is best with fresh-from-your-garden produce, but it is delicious any time of year. Enjoy!

Ingredients:

This salad features very simple ingredients: Bell Peppers, Tomatoes, Feta Cheese, fresh Basil, Olive Oil, and Sea Salt.

Directions:

Chop the bell peppers into bite-sized chunks, and dress them with a little olive oil and sea salt to taste. Place the bell peppers on the grill. (This can be done on the stove top in a grill pan as well.) Chop the tomato, and chiffonade the basil.

When the bell peppers are grilled, combine with tomatoes in a bowl. Add the feta cheese and basil. Toss and serve.

Ingredients:
  • Tomato (multiple colors if you like)
  • Bell Pepper (multiple colors if you like)
  • Feta Cheese
  • Fresh Basil
  • Olive Oil
  • Coarse Sea Salt
  • **NOTE** - Adjust amount of tomato and bell pepper for the number of people you are serving.
Directions:
  1. Core and cut the Bell Peppers into bite-sized chunks
  2. Drizzle with a little Olive Oil
  3. Sprinkle with Coarse Sea Salt (to taste)
  4. Put the Bell Peppers on the Grill, or in a grill an on the stove top
  5. While the peppers are cooking: Chop the Tomatoes
  6. Chiffonade (or chop) the Basil
  7. When the peppers are grilled, combine with tomatoes in a bowl
  8. Top with Feta Cheese Basil
  9. Toss the Salad

Arugula Salad with Tomato and Pignolias

Arugula Salad

with Tomato and Pignolias

 

This salad is so simple yet super delicious and healthy for you. It can be ready to eat in ten minutes or less. How great is that?

Here’s how you do it…

You’ll need Wild Arugula, Grape Tomatoes, a regular garden-sized Tomato, and raw Pignolias (Pine Nuts). I used a Lemon Boy tomato from our yard, which added a nice yellow color to the salad. If you can’t find Grape Tomatoes, any type of mini tomato will work just fine.

 

Toast the Pignolias in a skillet with Olive Oil, Coarse Sea Salt, and freshly ground Pepper. Cut the Grape tomatoes in half diagonally, and chop the garden tomato. Place the Arugula in a bowl, then the tomatoes, top with the toasted pignolias, and toss.

 

We served this as a side salad with burgers, hot off the grill, and one of our favorite grilled side dishes, Sour Cream, Cilantro, Parsley Potatoes.

  • I Bag - Wild Arugula
  • Grape Tomatoes (or any mini tomato)

  1. Put a skillet on to get hot with a little Olive Oil

  6. Place cleaned Arugula in a Bowl
  7. Put in both types of Tomatoes
  8. Top with Toasted Pignolias
  9. Toss

Winter Tomatoes with Recipes

What a Delight ~ Winter Tomatoes!

Luke and I still have four tomato plants in our garden that just do not want to give up the ghost. This is the second winter for my Lemon Boy tomato–can you believe that?! We also have a green bell pepper that has 4 or 5 peppers growing.

Sunday we picked a full dozen tomatoes from those vines. It was so exciting. So, I thought I would look around Pinterest and see what I could find for Winter Tomatoes. Here are a few of the yummy ideas I came across. Check out the recipes; I hope you enjoy.
