Spinach, Strawberry & Pine Nuts Salad Recipe

Spinach, Strawberry & Pine Nuts Salad is a recipe that I created to go with my Strawberry Jalapeño Glazed Chicken. It was absolutely delicious. It is dressed with a super easy vinaigrette that adds a pop of flavor that will tantalize your taste buds.

Spinach, Strawberry & Pine Nuts Salad

With Strawberry-Jalapeño Vinaigrette

This past weekend we had out-of-state family come for a visit, and that meant a large family gathering. Of course, great food is always a part of any get-together. I was in charge of cookies and a salad.

Luke, Rory, and I had really enjoyed this salad a couple weeks ago, when we had it with our Strawberry Jalapeño Glazed Chicken, so I thought I would share it with the fam. It makes a wonderful summer salad, and it was perfect for Luke’s vegetarian sister-in-law.

Spinach, Strawberry & Pine Nuts Salad

Here’s What You Need:

Fresh Spinach,  Strawberries, Pine Nuts, Parmesan Cheese, Smucker’s Fruit & Honey Strawberry-Jalapeño Fruit Spread, White Balsamic Vinegar, Olive Oil, Salt, and Pepper.

For the Salad:

In a small pan, heat Olive Oil over medium heat. Add Salt, Pepper, and Pine Nuts. Saute until Pine Nuts are toasted. Keep watch, as this does not take very long. Set aside to cool.

Remove  Strawberry leaves and/or stems. Chop into bite-sized pieces.

In a large bowl, combine Spinach, strawberries, pine nuts. Grate Parmesan Cheese over the top. Dress with Strawberry-Jalapeño Vinaigrette and toss.

For the Vinaigrette:

In a glass jar with a lid, add 1-part Strawberry-Jalapeño Fruit Spread and 1-part White Balsamic Vinegar. Place lid on jar and shake well. NOTE: For the 3 of us we used 1/4 cup fruit spread, 1/4 cup balsamic vinegar, and we had a little leftover vinaigrette).

It’s time for summer confessions, and there are two of them that relate to this recipe. First, one of my favorite summertime treats is fresh strawberries. I have fond memories of picking them right from our backyard when I was a kid. And, second, we absolutely love Mexican food at our house. Although, I have to admit, I usually ask for my jalapeños on the side. I am a wimp when it comes to spicy heat — think of me on the mild to mildly medium side of the heat scale.

So, I was excited, albeit a little nervous, when I got the opportunity to try Smucker’s Fruit & Honey Strawberry Jalapeño Fruit Spread. The NEW Strawberry Jalapeño flavor joins the Strawberry, Triple Berry, and Blueberry Lemon fruit spreads in the Fruit & Honey line. Give them all a try!

I was absolutely thrilled to discover that the heat in the fruit spread is not overpowering. It adds a very nice layer of flavor.

I had a great time creating new recipes to #SpreadTheHeat with Smucker’s, and know you and your family will love my Strawberry Jalapeño Glazed Chicken. It offers amazing flavors and a hint of heat. Serve up this easy and “better for you” dish for your next Sunday Dinner or any night of the week.

Strawberry Jalapeño Glazed Chicken

A “Better for You” Recipe Perfect for Sunday Dinner!

This glazed chicken recipe is delicious, easy, and satisfying. The sauce has only 5 ingredients (not counting olive oil or salt). How great is that? I know I love recipes with just a few ingredients, especially on busy nights. The glaze is fantastic, and the heat is in the mild to medium range.

Let’s Get Cooking:

Ingredients

Chicken, Shallot, Spicy Brown Mustard, White Balsamic Vinegar, Smucker’s Fruit & Honey Strawberry Jalapeño Fruit Spread, Chives, Olive Oil, and Salt.

How To:

  • Pre-heat oven to 375° F.
  • Clean your chicken and salt and pepper to taste.
  • In a cast iron skillet, drizzle some olive oil. When skillet is hot, add chicken. You want to give the chicken a nice brown on both sides.
  • While the chicken is browning, mince your shallot.
  • Once chicken is browned, place the skillet into the oven to finish cooking.
  • Make sauce while chicken is in the oven.

Making the Sauce:

  • In a small sauce pan, drizzle Olive Oil, and heat pan.
  • Mince shallot, add to pan, and saute until translucent.
  • Add Spicy Brown Mustard.
  • Stir in White Balsamic Vinegar.
  • Blend.
  • Add Strawberry Jalapeño Fruit Spread.
  • Mix well.
  • Bring sauce to a boil, then turn down to lightly simmer for 5-6 minutes, until slightly thickened.
  • Stir in chives, and turn off heat.

Your chicken should be finished, check to be sure. Let the chicken rest outside the oven for a few minutes to let juices settle. Plate the chicken, and spoon glaze over the top. Garnish with fresh sliced strawberries and jalapeño, and a couple spears of chive.

Easy right? Wait until you taste this glazed chicken. Your taste buds will thank you! It was a huge hit at our house.

Rory and I picked up our Smucker’s Fruit Spread at our local Walmart, you can too! Find it on the condiment aisle. We love that this is a “better for you” product that is sweetened naturally with honey. Rory loves the Blueberry Lemon, but now she’s torn with the NEW Strawberry Jalapeño flavor.
