German Pancakes are a crepe-like pancake, they are large and thin. You brush them with Gold’n Soft spreadable butter and add cinnamon and sugar, or jellies, jams, fresh fruit, or whatever you like. Roll the pancake, sprinkle with powdered sugar if desired and serve. They are perfect for a family with differing tastes because you make them individually. Have all one flavor (like me, cinnamon and sugar – yum!), or mix it up.

These pancakes are quick and easy, so they are a perfect choice for fueling the kids up before school, a leisurely weekend breakfast, or a holiday brunch.

 

German Pancakes Recipe

Ingredients:

  • 1-1/4 Cup – Milk
  • 4 – Eggs
  • 1 Cup – Flour
  • 1/4 Teaspoon Salt
  • Gold’n Soft Spreadable Butter
  • Fillings of Choice: Cinnamon and Sugar; Jams; Jellies, Fruit, etc.
  • Powdered Sugar (Optional)
  • Syrup (optional)

Directions:

  1. Crack open the Eggs into a bowl.
  2. Add Milk to eggs, beat well.
  3. Mix Flour and Salt in a separate bowl.
  4. Stir flour and salt mixture into the milk and eggs gradually, until smooth.
  5. The batter will be thin.
  6. Heat a heavy 8-inch to 10-inch skillet and grease lightly with butter or oil.
  7. Pour only enough batter to make a very thin pancake. Tip the skillet from side to side and around to help spread the pancake batter as needed.
  8. Cook on one side (without flipping) until the pancake begins to blister or bubble. Flip the pancake and cook the other side until a light golden color. Do not over cook. You do not want them to get hard or crispy. NOTE: Pancakes cook very quickly, pay attention.
  9. Remove from skillet and place on a board.
  10. Once you have several pancakes stacked on the board, you can begin filling one at a time.
  11. Brush one side only with Gold’n Soft butter.
  12. Add about 1 to 2 Tablespoon(s) of your desired filling: Cinnamon and Sugar; Jam; Jelly; Fruit; etc. to the buttered side.
  13. Roll pancake from one edge all the way across to the other side.
  14. Place rolled pancake (or two) on a plate and dust with Powdered Sugar.

NOTE: If you have two cooks, one can be cooking the pancakes while the other fills and rolls them. Kids love to help with these pancakes.

A Girls’ Night Favorite

 

Getting together with my girl friends is something to which I look forward. We have such a fun and stress-free time on Girls’ Night. It doesn’t really matter if we just sit a round chatting, or if we are working on a charitable project, crafting, or playing games. What is always part of our time together is camaraderie, laughter, and great food and drink.

Today, I’d like to share one of our favorite recipes, Fruity Rum Punch. It is super easy to make and can be done one at a time or in a large batch — great for parties. This punch features Bacardi Superior, which is absolutely perfect for summer rum punches.

 

Fruity Rum Punch Cocktail Recipe

Ingredients:

  • 2 Ounces – Bacardi Superior Rum
  • 2 Ounces – Orange Juice
  • 1-1/2 Ounces – Pineapple Juice
  • 1/4 Ounce – Grenadine
  • Squeeze of Lime
  • Ice
  • Orange (slices for garnish)
  • Lime (slices for garnish, and the squeeze)
  • Pineapple Chunks (optional garnish)

Directions:

  1. Fill glass with the desired amount of ice cubes.
  1. Pour Bacardi Superior Rum over ice.
  1. Add Orange Juice, Pineapple, and Grenadine.
  1. Squeeze a little Lime into the drink, and stir.
  1. Garnish with Orange slices and Lime slices.

Notes:

  • This recipe serves one, but you can easily multiply the recipe to make a pitcher or punch bowl full. Enjoy!
  • You can switch out the Bacardi Superior for Bacardi Banana Flavored Rum to add another fruity layer to the drink.

Strawberry Jalapeño Glazed Chicken Recipe

It’s time for summer confessions, and there are two of them that relate to this recipe. First, one of my favorite summertime treats is fresh strawberries. I have fond memories of picking them right from our backyard when I was a kid. And, second, we absolutely love Mexican food at our house. Although, I have to admit, I usually ask for my jalapeños on the side. I am a wimp when it comes to spicy heat — think of me on the mild to mildly medium side of the heat scale.

 

So, I was excited, albeit a little nervous, when I got the opportunity to try Smucker’s Fruit & Honey Strawberry Jalapeño Fruit Spread. The NEW Strawberry Jalapeño flavor joins the Strawberry, Triple Berry, and Blueberry Lemon fruit spreads in the Fruit & Honey line. Give them all a try!

 

I was absolutely thrilled to discover that the heat in the fruit spread is not overpowering. It adds a very nice layer of flavor.

Strawberry Jalapeño Glazed Chicken

A “Better for You” Recipe Perfect for Sunday Dinner!

 

This glazed chicken recipe is delicious, easy, and satisfying. The sauce has only 5 ingredients (not counting olive oil or salt). How great is that? I know I love recipes with just a few ingredients, especially on busy nights. The glaze is fantastic, and the heat is in the mild to medium range.

Let’s Get Cooking:

 

Ingredients

Chicken, Shallot, Spicy Brown Mustard, White Balsamic Vinegar, Smucker’s Fruit & Honey Strawberry Jalapeño Fruit Spread, Chives, Olive Oil, and Salt.

How To:

  • Pre-heat oven to 375° F.
  • Clean your chicken and salt and pepper to taste.
  • In a cast iron skillet, drizzle some olive oil. When skillet is hot, add chicken. You want to give the chicken a nice brown on both sides.
  • While the chicken is browning, mince your shallot.
  • Once chicken is browned, place the skillet into the oven to finish cooking.
  • Make sauce while chicken is in the oven.

Making the Sauce:

  • In a small sauce pan, drizzle Olive Oil, and heat pan.
  • Mince shallot, add to pan, and saute until translucent.
  • Add Spicy Brown Mustard.
  • Stir in White Balsamic Vinegar.
  • Blend.
  • Add Strawberry Jalapeño Fruit Spread.
  • Mix well.
  • Bring sauce to a boil, then turn down to lightly simmer for 5-6 minutes, until slightly thickened.
  • Stir in chives, and turn off heat.

 

Your chicken should be finished, check to be sure. Let the chicken rest outside the oven for a few minutes to let juices settle. Plate the chicken, and spoon glaze over the top. Garnish with fresh sliced strawberries and jalapeño, and a couple spears of chive.

Easy right? Wait until you taste this glazed chicken. Your taste buds will thank you! It was a huge hit at our house.

Watermelon, Blueberry & Feta Salad

A Refreshing PATRIOTIC Side Dish!

 

Labor Day is here. That means the end of summer, and the last of the big BBQs. So, get out your flags and bunting, and let’s make another Patriotic splash! I’m sharing with you today a recipe for a delicious and refreshing red, white, and blue salad that is wonderful anytime, but especially fun for those Star-Spangled holidays–Watermelon, Blueberry & Feta Salad. It is super quick, super easy, and super tasty.

Here’s What You Need:

Watermelon, Blueberries, Feta Cheese, and Balsamic Vinegar. Can you believe it? There are only 4 ingredients.

The Directions:

Cut your watermelon into large rectangles, triangles, crescents, or whatever shape you’d like. Stars perhaps? Place the watermelon on a platter. Top with blueberries and Feta cheese. Drizzle with Balsamic vinegar. Easy peasy, right?

This watermelon salad will not only be a big hit for its fabulous flavor, but also for its fun and festive appearance.

Tip for Cutting Watermelon

If you are just wanting bite-sized chunks of watermelon for this salad or any other time, try this easy cutting tip.

  1. Cut your watermelon in half.
  1. Using a knife, cut along the outer edge of the red, along the rind.
  1. Now, take the knife and cut through the ripe fruit (but not through the rind), making strips or vertical lines.
  1. Then cut perpendicular lines, so it resembles a checker board.
  1. Scoop out the watermelon using a large spoon. Scoop horizontally to make chunks.

All the juices stay within the rind making for easy clean-up.
