Spring Cleaning – What’s on The Icky List?

Orange Mint Ricotta Cookies Recipe

A deliciously aromatic soft-style cookie

 

This easy to make cookie is a must add to your recipe box. Orange Mint Ricotta Cookies are perfect all year round. Citrus with a hint of mint is deliciously paired with ricotta cheese for a soft-style cookie. My family gobbles them up!

Let’s get baking!

Ingredients:

  • 2 Cups – Granulated Sugar
  • 2 – 3 – fresh Oranges (for 6 Tablespoons Juice and 3 – 4 Tablespoons Zest)
  • Fresh Mint (for 1 – 2 Tablespoons finely chopped)
  • 2-1/2 Cups – All-purpose Flour
  • 1 teaspoon – Baking Powder
  • 1 teaspoon – Salt
  • 2 – large Eggs
  • 1 Stick – Butter (softened)
  • 15 Ounces (one container) – Ricotta Cheese
  • 1-1/2 Cups – Powdered Sugar.

 

Directions:

for the cookies…

  • Preheat oven to 375° F.
  • Line baking sheets with Parchment Paper.
  • Zest the rinds of 2-3 Oranges (enough to get 3 – 4 tablespoons of zest).
  • Finely Chop Mint (enough to get 1 – 2 tablespoons).
  • In a medium bowl, pour 2-Cups Granulated Sugar.
  • Add 2 – 3 Tablespoons Orange Zest and all of the Chopped Mint to sugar, and mix well with your fingertips.

  • Set aside and stir occasionally with fingertips. Allow sugar to become very fragrant.
  • Whisk together 2 1/2 Cups Flour, 1 teaspoon Baking Powder, and 1 teaspoon Salt in a medium bowl.
  • In a large bowl (or stand mixer), combine 1 stick Butter and the prepared Orange Sugar. Beat until light and fluffy.
  • Add 2 Eggs, one at a time, mixing slightly after each addition.
  • Mix in 15 ounces (1 container) Ricotta Cheese and 3 Tablespoons Orange Juice until incorporated.
  • Stir in dry ingredients a little at a time, until just combined.
  • Spoon dough onto prepared baking sheets (about 1 1/2 – 2 Tablespoons for each cookie).
  • Bake for 13 – 15 minutes, until just slightly turning golden at the edges.
  • Remove from the oven, let cool on baking sheets for 10 minutes.
  • Transfer to wire racks (placed on top of the wax paper), and allow to cool completely.
  • Prepare the Orange Glaze/Icing.

for the Glaze/Icing…

  • Sift 1 1/2 Cups Powdered Sugar into a small to medium bowl.
  • Add 2 – 3 Tablespoons Orange Juice, and 1 Tablespoon Orange Zest.
  • Mix well.
  • Adjust Powdered Sugar for the thickness of the glaze/icing.

  4. Finely Chop Mint (enough to get 1 - 2 tablespoons).
  5. In a medium bowl, pour 2-Cups Granulated Sugar.
  6. Add 2 - 3 Tablespoons Orange Zest and all of the Chopped Mint to sugar, and mix well with your fingertips.
  7. Set aside and stir occasionally with fingertips. Allow sugar to become very fragrant.
  8. Whisk together 2 1/2 Cups Flour, 1 teaspoon Baking Powder, and 1 teaspoon Salt in a medium bowl.
  9. In a large bowl (or stand mixer), combine 1 stick Butter and the prepared Orange Sugar. Beat until light and fluffy.
  10. Add 2 Eggs, one at a time, mixing after each addition.
  11. Mix in 15 ounces (1 container) Ricotta Cheese and 3 Tablespoons Orange Juice until incorporated.
  12. Stir in dry ingredients a little at a time, until just combined.
  13. Spoon dough onto prepared baking sheets (about 1 1/2 - 2 Tablespoons for each cookie).
  14. Bake for 13 - 15 minutes, until just slightly turning golden at the edges.
  15. Remove from the oven, let cool on baking sheets for 10 minutes.
  16. Transfer to wire racks (placed on top of the wax paper), and allow to cool completely.
  17. Prepare the Orange Glaze/Icing.

    For the Glaze/Icing:

  18. Sift 1 1/2 Cups Powdered Sugar into a small to medium bowl.
  19. Add 2 - 3 Tablespoons Orange Juice, and 1 Tablespoon Orange Zest.
  20. Mix well.
  21. Adjust Powdered Sugar for the thickness of the glaze/icing.
